Patriotic Push Pops and Pampers #BETTERFORBABY Giveaway

For this upcoming July 4th weekend I wanted to make something patriotic and fun that Ava would enjoy. It's upwards of 100 degrees here in Louisiana and my girl loves to be outside! So I decided to make these Frozen Yogurt Push Pops for her {in red, white, and blue, of course}.

Ingredients:

Makes 4 Frozen PushPops

  • 2-3 tbsp strawberry Greek yogurt
  • 2-3 tbsp blueberry Greek yogurt
  • 2-3 tbsp vanilla Greek yogurt
  • 1-2 drops blue food coloring, optional
  • Frozen pop molds

Directions: 

  1. I found cute plastic frozen push pop molds at the store {monster shapes!} but you could also use dixie cups with popsicle sticks stuck in the middle too.
  2.  Use individual yogurt cups and scoop a couple tablespoons into each pop mold. 
  3. Since these are patriotic and I wanted red, white, and blue I did that order with blue {blueberry} being the first yogurt I added to the mold then white {vanilla} followed by red {strawberry}.
  4. Optional: you can add a couple drops of blue food coloring to your blueberry yogurt cup before adding to your molds to make it a more prominent blue color. 
  5. Free upside down pushpop cups {mine come with a lid to place on top} on a flat surface in your freezer and freeze overnight or at least 6-7 hours.
  6. To serve, remove a pop from the freezer and let sit at room temp for 10 min. then it will be soft enough to push up, but still frozen too!

Ava loves Monsters Inc. so she got a kick out of these! 
Use any single serve flavored yogurt. 
I like Greek yogurt because it is thicker and creamier.
Wash your molds and get them ready to fill on a flat surface.
I added 2 drops of blue food coloring to my blueberry
 yogurt to make it a brighter blue.
Add a spoonful or two {depending on the size of your mold/cup} of blue yogurt to your pushpop container.
Now top with the same amount white {vanilla} yogurt.
And finally add red {strawberry} yogurt to the top.
Add the pushpop molds to a flat surface in your freezer {please excuse my messy, packed to the gills freezer!} and freezer overnight or about 7 hours.  
When you are ready to serve, remove the pops from the freezer 
and let sit at room temp for 5-10 minutes until they are slightly 
softened and can by pushed up.

Ava and her Daddy enjoyed these all week long, especially after playing outside. 
They are the perfect summertime cool treat!

Honey Butter Grilled Corn

Happy Father's Day! I am so blessed to have two amazing men in mine and my daughter's lives!
I decided to share this Grilled Honey Butter Corn recipe today since both my Dad and my husband love to grill. In the summer season corn is fresh and available everywhere for low prices so we have it often. This is a recipe that they both love and I am sure the men in your life will enjoy too.

Ingredients:

  • 4 ears of corn, shucked
  • 1/2 cup (1 stick) butter, softened
  • 2 tbsp honey
  • salt and pepper, to taste

Directions:

  1. Shuck the corn and cut off ends.
  2. Mix together softened butter and honey in a small bowl.
  3. Spread onto all sides of corn.
  4. Season with salt and pepper.
  5. Wrap securely in aluminum foil, twisting the ends.
  6. Grill wrapped corn for about 20 minutes or until tender on a covered hot grill.
  7. Unwrap corn, discard foil, and grill on the grates for a couple minutes
     to char the corn slightly and add that great grill flavor!
  8. Brush with additional honey butter and serve hot. 
Start with 3-4 large ears of corn.

Wrap corn securely in aluminum foil.
Twist the ends of the foil then get ready to put on a hot grill.

 to char the corn slightly and add that great grill flavor!

It's dinner time: pork tenderloin, mushrooms, onions, and Honey Butter Grilled Corn.
Brush with additional honey butter and serve hot.

Easy Cheesy Cauliflower Crust Stromboli

Pizza is a popular dinner request in my house and I am always experimenting with new twists on the traditional pizza pie. We jumped on the low carb bandwagon when I was pregnant and had high blood sugar earlier this year, and I became slightly obsessed a fan of using cauliflower in place of bread and potatoes. I made Cauliflower Chowder and Cauliflower Breadsticks and even Cauliflower Pizza! This recipe for Easy Cheesy Cauliflower Crust Stromboli uses the same ingredients as my Cauliflower Pizza Crust but I simply roll out the dough into a rectangle, fill with toppings and lots of cheese, and fold over to make an extra cheesy stromboli! Slice and serve with marinara sauce for dipping and I guarantee you will think twice about eating the same ol’ traditional pizza next time!   

Ingredients:

Makes 2 large strombolis
  • 1 head of cauliflower, chopped (about 5-6 cups)
  • 4 eggs, beaten
  • 4 cups shredded Cheddar or Italian blend cheese
  • 12 oz jar Marinara or Pizza sauce
  • 1 tbsp oregano
  • 4 cloves garlic, pressed
  • salt and pepper, to taste
  • Pizza toppings of your choice, we used sliced olives, pineapple, and pepperoni

Directions:

  1. Preheat oven to 425 degrees. Line 2 large baking sheets.
  2. Add chopped cauliflower to a steamer and steam until softened and fork tender, about 15-20 minutes.
  3. Add cauliflower to a food processor and pulse until the texture of rice.
  4. Place cauliflower in a hand towel or cheesecloth and squeeze out any excess liquid.
  5. Add cauliflower to a bowl. Then add in eggs, 2 cups of shredded cheese, oregano, garlic and salt and pepper. Stir until combined.
  6. Pour half onto a lined baking sheet and shape into a rectangular shape. Repeat with remaining cauliflower mix on other lined baking sheet.
  7. Bake the crusts for about 20-25 minutes or until golden.
  8. Remove from oven and top each with ½ cup or so of marinara sauce (spreading to cover) and toppings of your choice sprinkled in the center.
  9. Then add ½ cup shredded cheese on top of each. Leave a barrier around the sides so you can fold over and seal the stromboli.
  10. Very gently, using a spatula, fold over the crust on both sides (similar to a burrito but without folding the ends). Don’t worry if it’s messy- you are going to cover it with more cheese!
  11. Top with an additional ½ cup cheese on each. I like to add a few pepperonis on top too!
  12. Bake in the oven for another 5-10 minutes until cheese is melted and stromboli is warmed throughout.
  13. Slice and serve with warm marinara sauce for dipping (optional).
