One Pot Shrimp Scampi Pasta

It's seafood time tonight and I have got a delicious meal to share with
 y'all that is done in just 10 minutes!
One Pot Meals are a lifesaver for busy families like ours, so I created a Shrimp Scampi inspired pasta featuring SeaPak Shrimp & Seafood Co Shrimp Scampi. Their Shrimp Scampi is a 
 family friendly meal option and since it is already packed with flavor and sauce all you need to do is cook it, add it to your pasta, and dinner is done! 

For this recipe I cook everything in just one pot. That's right, only one pot to wash so easy clean up too! First you add your broth or water, then once it's boiling add your pasta of choice and veggies then your SeaPak Shrimp & Seafood Co Shrimp Scampi and that's it folks! It cook in under 10 minutes and you can relax and enjoy a tasty meal with your family.

Shrimp Scampi is my favorite seafood dish and this delicious and easy version is perfect for family meals and even date night's in!


Ingredients:

Makes 4-6 servings

  • 12oz pkg Seapak Shrimp Scampi
  • 1 lb pasta {I used angel hair}
  • 8 oz white mushrooms, sliced
  • 2 cups spinach
  • 2 cloves garlic, pressed
  • 1/2 Vidalia {or large yellow} onion, thinly sliced
  • 32oz container chicken broth
  • 1/3 cup shredded Parmesan cheese
  • salt and cracked black pepper, to taste
  • parsley, chopped for garnish

Directions: 

  1. Add chicken broth to a double boiler or large pot over medium high heat.
  2. Bring to a boil then add pasta, mushrooms, spinach, garlic, and onion. 
  3. Mix until all ingredients are combined and submerged in the broth.
  4. Turn down to medium heat and add frozen shrimp scampi and salt and pepper.
  5. Cook at a simmer for 5-7 minutes or until shrimp is pink and most of the liquid is absorbed.
  6. Take off the heat and stir in 1/3 cup shredded Parmesan cheese.
  7. Add the hot pasta to plates and garnish with chopped parsley before serving.

Add chicken broth to a double boiler or large pot over medium high heat.
The best thing about this recipe is it is perfect for so many different veggies.
I chose my favorites for this dish: spinach, mushrooms, onions, and garlic.
Change it up and try peas, zucchini, tomatoes, cauliflower, etc.
Bring to a boil then add pasta, mushrooms, spinach, garlic, and onion. 
Nothing is easier than a one pot meal but I have another time saver for this meal!

Just add to your boiling pasta and the sauce and shrimp cook right in.
Mix until all ingredients are combined and submerged in the broth.
Turn down to medium heat and add frozen shrimp scampi and salt and pepper.
Cook at a simmer for 5-7 minutes or until shrimp is pink and most of the liquid is absorbed.
Take off the heat and stir in 1/3 cup shredded Parmesan cheese.

Add the hot pasta to plates and garnish with chopped parsley before serving.
