As You Wish Glazed Cherry Hand Pies

It's Movie Monday again and since it's almost February, I am sharing a recipe from my favorite romantic movie, The Princess Bride today. These adorable As You Wish Glazed Cherry Hand Pies are filled with homemade cherry pie filling, baked in a heart shape pie crust, then dunked in a sweet glaze. The perfect Valentine's treat to make for friends and loved ones or bake a few to share during a romantic movie night!

Dr Pepper Chocolate Fudge Football Cake

This ultra rich, super fudgy cake has just 2 ingredients : cake mix and a can of Dr Pepper soda!
 I made it for my Dr Pepper College Football Fans Party and it was a hit!

I hosted a Fro Yo and Football party last November sponsored by Houseparty and Dr Pepper.  
I thought since this was a dessert party that a chocolate soda cake would be the perfect treat.
We met our friends at our local fro yo spot, watched football, and enjoy fro yo, cake, and Dr Pepper. It doesn't get much better than that!

I think the Creamsicle Cake sounds delish!

The best part of baking is always licking the beaters, right?!

Ingredients: 

  • 1 box chocolate fudge cake mix
  • 1 12 ounce can of Dr Pepper soda
  • chocolate fudge frosting, optional
  • white decorative icing, optional

Directions: 

  1. Preheat oven to 350 degrees.
  2. Add cake mix and one can of Dr Pepper soda to a large bowl.
  3. Mix until combined then pour into a greased baking dish. I prefer an extra thick cake so I used an 8x8 but 9x13 works too.
  4. Bake as directed on the cake mix box.
  5. Let cool then invert on a cutting board or platter.
  6. If you want to shape it like a football, I used a small football shaped bowl and cut out the 8x8 cake into a football shape.
  7. Frost with chocolate fudge frosting all over then add white icing football laces to the center of the cake.
Notes: No eggs, water, or oil needed. You can use any canned soda you like. 
Yes, you read right: 
only two ingredients are needed to make this cake: 
boxed chocolate fudge cake mix and one 12 oz can of soda.
Start with a can of Dr Pepper or pour 1 1/2 cups like I did.
Add cake mix and Dr Pepper soda to a large bowl.
Mix well.
Pour into a greased baking dish. It does not rise a lot so I prefer 8x8.
Bake as directed on the cake mix box.
Let the cake cool then invert on a cutting board or platter.
 I used a small football shaped bowl as the outline.
Cut out the cake into the football shape.
Now it's time to decorate! 
Tip: you can use the extra cake and frosting and make cake pops!
Frost with chocolate fudge frosting all over then add 
white icing football laces to the center of the cake.
We love sharing good food with good friends.
All ready for Football and Fro Yo {and Dr Pepper Cake}!
It must have been good- the kids dug right in with forks!

Can you tell these two loved their apple butter topped waffles this morning? 

Apple butter is applesauce that is cooked down for a few hours, reducing it to a thick and caramel like spread with a very concentrated and beautiful apple flavor. This sugar free spread is delicious smeared on toast, or as a topping for oatmeal, waffles or pancakes.

Ingredients:

Makes 2 cups
  • 3 pounds organic apples, peeled, cored and chopped into bite sized pieces
  • 3 thin slices of fresh ginger
  • 5 cardamom pods
  • 1 star anise
  • ½ cup apple cider (juice)
  • ¼ cup maple syrup
  • 1 Tbsp lemon juice
  • 2 cinnamon sticks

Directions:

  1.  Place the cardamom pods, star anise and ginger onto a small piece of cheesecloth, tie up the corners with a piece of kitchen string to create a little pouch. (to avoid fishing around for them later)
  2. Add the spice bundle, chopped apples, apple cider, maple syrup, lemon juice, and cinnamon sticks to a medium sized pot.
  3. Place the lid on the pot and bring to a boil over medium high heat. 
  4. Lower head to medium low and simmer for 30 - 35 minutes with the lid slightly ajar. Cook until the apples are soft and beginning to break down. Be sure to give it a stir every 10 minutes or so, to avoid sticking.
  5. Once the apples are cooked, take the pot off the heat and remove the spice bundle and
  6. cinnamon sticks.
  7. Preheat the oven to 325 degrees F.
  8.  Transfer the apple mixture to a blender, food processor or use an immersion blender to blend until smooth. Be sure to allow the steam to escape while processing in a blender or food processor.
  9. Transfer the blended apple mixture to a 9 x 13 inch pan and place in the preheated
  10. oven. Cook for 1 ½ to 1 ¾ hours, stirring every 15 to 20 minutes. The mixture will thicken considerably and turn from a yellowish pink to a deep golden brown color when ready.
  11. Remove from oven and cool. It will thicken up even more as it cools.
  12. Transfer to a clean jar and store in the fridge for up to two weeks. For longer storage, freeze or can the apple butter.

This recipe uses whole spices to flavor the apple butter.
I bought mine in the bulk section at Whole Foods and HEB.

You can use a cheesecloth like the recipe recommends or I simply used a tea strainer.
Beautiful, crisp, organic apples are the best!
I used my favorite: Red Delicious.
I love that this is a sugar free recipe!
Maple syrup sweetens the apple butter naturally.
Add 3lbs of peeled and chopped apples to a medium sized pot.
Mix in apple cider, maple syrup, and fresh lemon juice.
Now add the spice bundle and the cinnamon sticks.
Place the lid on the pot and bring to a boil over medium high heat.
Lower head to medium low and simmer for 30 - 35 minutes with the lid slightly ajar. Cook until the apples are soft, stirring often.
Once the apples are cooked, take the pot off the heat and remove the spice bundle and
cinnamon sticks .
Transfer the apple mixture to a food processor and blend until smooth.
Transfer the blended apple mixture to a 9 x 13 inch pan and bake at 325 degrees.

My girls snack on apples almost every day so they were so excited to try this maple apple butter.
We had this creamy sugar free apple butter for breakfast all week on top of toast and waffles.
Best of all, our tummies were full and my heart is happy knowing I am feeding my girls a delicious homemade spread that is sugar free {and you would never know!}.
