Post® Raisin Bran cereal has been my favorite for years so I was excited to try this recipe. It was  gobbled up in a day by my family! It's now a favorite for all of us and I make a big batch to last us all week!
You can use any kind of coconut flakes you like.
The larger coconut flakes in the front are toasted and unsweetened.
The shredded coconut in the back is the traditional sweetened kind.

I love adding dried fruit to my granola. Since raisins were already part of the Post® Raisin Bran cereal I decided to add dried apples instead of my normal dried cranberries.
Toasted nuts are my go to for breakfast. Almonds, walnuts, peanuts, they all are delish.
But pecans are my true love!
Mix all the dry ingredients together in a large bowl along with salt and cinnamon.
In another bowl add honey, oil, and vanilla and mix until smooth and combined.
Pour honey mixture on top of the cereal and toss well to combine.
Spread out the lined baking sheet.
Bake for 5 minutes then stir and bake for 3-5 more minutes until toasted and fragrant.
Let cool then pour into a seal-able mason jar or container and use within a week.
Delicious on it's own as a snack or served on top of yogurt for breakfast.
Post® cereals all have power packed nutrition you need to start you day!
