Chicken Bacon Ranch Sandwiches #MasterSummer

It is finally warm and sunny outside and that means we spend a whole lot of time in our backyard. Whether we are grilling, gardening, partying, or playing we love being outside in our yard having fun in the sunshine. Today I am sharing my Chicken Bacon Ranch Sandwiches, which are the perfect summertime messy but good meal to serve at your backyard parties all season long!

We love entertaining in our backyard and now that the weather is warm and the Texas sun is out we are ready to entertain. We love grilling but sometimes I like to use my slow cooker or oven to bake a simple family meal and we enjoy eating with friends and family on our backyard patio. Then, of course, we have s'mores in our fire pit! That's my idea of a perfect summer meal!

 I have had a Sam's Club membership since before I was married with kids but now that I am a Mama I shop there all the time! I love the bulk items and great savings and now that summer is almost here we shop for all our backyard entertaining supplies!

The Lion King Peanut Butter Fruit Dip #MovieMonday


It's movie night tonight and we are watching Disney's The Lion King. I made the girls, with some help from my creative husband, a healthy and fun Disney themed treat to snack on during the show! It turned out better than I imagined and they gobbled up my Peanut Butter Fruit Dip faster than you can say
Hakuna Matata! 
On the last (or fourth) Monday of each month, a group of bloggers participate in a #MovieMondayChallenge, hosted by C'mon Get Crafty! We decide on a topic, genre, or specific movie to use for inspiration and everyone gets free reign to create something wonderful!
This month's challenge was. . . . Fathers! Your Dad's Favorite Film, or just a movie about fatherhood! Everyone was allowed to choose their own favorite film so long as it was inspired by the challenge word. I chose- The Lion King. I love this Disney movie and the scenes with Simba and his wise and brave father Mufasa are some of my favorites. It is a great movie to watch with your kids especially on Father's Day! I created this healthy peanut butter yogurt fruit dip inspired by The Lion King for #MovieMonday and made it even more special by decorating it to look like a mighty lion!

Look at those happy faces! I love making fun food like this dip for my kiddos. And cuddling up and watching one of my favorite childhood movies is even more special.

Fried Pickle Burger with Buttermilk Ranch Dip #BurgerMonth

This post is part of a kick butt burger grill giveaway hosted by GirlCarnivore but the burger epicness is all my own. 
I am excited to participate in Burger Month with Girl Carnivore this year. Over 50 bloggers including myself are sharing their best burger creations throughout the month of May along with huge giveaways you don't want to miss! 
For my Burger Month creation this year I decided to make a Southern inspired Fried Pickle Burger with Buttermilk Ranch Dip. I cooked a thick 1/2 lb peppercorn crusted burger patty and added my favorite appetizer, fried pickles, on top. Then drizzled on creamy buttermilk ranch dressing because ranch is good on just about anything, right?!

Southern Fried Pickles

Today I am sharing one of my favorite comfort food snacks: Southern Fried Pickles .
 I love ordering them at restaurants but have never tried to make them myself until now. They are surprisingly easy to make and take only a few minutes to prepare and cook. I decided to coat them only in seasoned flour instead of a thick egg batter so they are crunchy and light and not thick coated. I love how they came out and my husband and I gobbled them up for dinner tonight!
Fried pickles are an addictive appetizer that we often order when we dine out at local sports bars. I made this copycat recipe and I was so excited my version came out just like the restaurant version- crunchy, tangy, and delicious!

Funfetti Cake Mix Cookies for Teacher Appreciation

Bake these soft colorful Funfetti cookies at home with your kids! They make delicious treats for teachers on the last day of school. Wrap them up in a colorful container with a "Smart Cookie" sign and handout at school!  
Oh my heart!My oldest daughter Ava graduated preschool today! All day long I have been holding back tears y'all. how is it my baby girl is a kindergartner already? 
Ava attends part day school on the Army post here and is lucky enough to have not one, not two, but three amazing teachers! She will sure miss them! 
We brought them each a basket of these Funfetti Cookies as a thank you present.Ava was so happy to give them a gift that she helped bake. I love when she helps me in the kitchen!

Slow Cooker Cinnamon Fried Apples

Good morning friends! 
We are one week away from summer vacation which means - no school!- and this Mama is exhausted already just thinking about it!
Luckily, we took a family trip to the grocery store to stock up on some essentials so I can meal prep and plan lunches for this week. I decided to pick up some beautiful, crunchy red apples too and add them to my slow cooker for an easy Cinnamon Fried Apples dessert.

Cinco de Mayo Taco Cake

This Mexican celebration is a huge deal here in San Antonio so I thought I would make a meal worthy of such a party! This easy to assemble casserole is made with tortillas layered with rice, beans, cheese, and salsa chicken or pork. Cut into "cake slices" and serve sprinkled with toppings!

Southern Fruit Iced Tea #BrunchWeek
