School Days Apple Cupcakes

School Days are here and my little girl is starting kindergarten, y'all!
 We celebrated with pretty Apple Cupcakes and photos by Jeni Marie Studios.

Ingredients:

Makes 12 cupcakes
  • 12 red cupcakes, baked and cooled
  • red frosting/decorating icing
  • red sugar sprinkles
  • pretzel sticks
  • sour green gummy straws, cut into small pieces

Directions: 

  1. Bake 12 red cupcakes {any flavor} in red cupcake liners. Let cool.
  2. Frost the tops with red decorating icing. 
  3. Add sugar sprinkles to a small plate and dip and roll each iced cupcake top to coat completely in the red sugar.
  4. Break pretzel sticks into small pieces and press one piece into the center of each cupcake for the stem.
  5. Finally cut green gummy straws into tiny pieces and press next to the pretzel stick on each cupcake for the leaf. You can also make a small hole and slide into the top of the cupcake. 
  6. Serve right away or store in a sealed container for up to 3-4 days.
I used this Radiant Red cupcake mix to make 12 pretty red apple colored cupcakes.
I baked 12 cupcakes in red liners.
Bake according to package directions then let cool completely.
How beautiful are these bright red cakes?!
Now time for decorating!
I used red icing, red sugar crystal sprinkles, pretzel sticks, and green sour straws.
Frost each cupcake with the red decorating icing.
Add red crystal sprinkles to a small plate
Dip and roll each iced cupcake top to coat completely in the red sugar.
Break pretzel sticks into small pieces and press one piece into the center of each cupcake for the stem. Cut green gummy straws into tiny pieces and press next to the pretzel stick on each cupcake for the leaf.

25 Just Peachy Delicious Desserts

 August is National Peach Month and sweet and juicy peaches are one of our favorite summer fruits! For the first time this year, we even got to pick peaches at the orchard in Hill Country, Texas! So I am sharing this tasty list of 25 Just Peachy Summer Desserts for you to make this summer {or year round for that matter}! Whether you use canned or fresh off the farm peaches, you are going to love these delicious desserts!

Oatmeal Cookie Grilled Peaches

Juicy Texas peaches are in season now and we love using them for both sweet and savory dishes. Simple grilled peaches are my favorite and when the weather isn't cooperating I grill them in my grill pan on the stove and pop in the broiler. For this dessert, I crumble oatmeal raisin cookies on top and a scoop of ice cream for a simple summer treat!

Ingredients: 

Makes 4 servings
  • 2 large peaches
  • 2 tbsp butter, melted
  • 2 tbsp brown sugar
  • 4 oatmeal raisin cookies
  • 4 scoop of ice cream {I used butter pecan}

Directions:

  1. Cut peaches in half and remove pits.
  2. Brush peaches with melted butter all over and place cut side down on the grill or in a grill pan on the stove. 
  3. Cook over medium heat for 4-5 minutes then brush the tops with remaining butter and flip, cooking for another couple minutes.
  4. Preheat broiler on low.
  5. Crumble cookies in a bowl and mix in brown sugar.
  6. Spoon cookie crumble on top of the cut side of each peach. 
  7. Place peaches in a baking dish.
  8. Place in the oven on low broil until browned, about 2-3 minutes.
  9. To serve, place one peach halve on a small place and top with a scoop of ice cream. Serve immediately.
Big ol' Texas peaches are the BEST! They are in season in the summer and we picked them fresh 
off the farm in Hill Country, Texas last month!

My oldest girl is in Kindergarten this year and my little Stella does Pre-K 3. They are lovin' it so far and I am still in denial they are growing up so fast!
