Kentucky Derby Pie for Pi Day

This Kentucky Derby Pie is heaven in a pie shell I kid you not! This is inspired by my Kentucky family and my memories as a kiddo visiting them in my frilly dresses and big hats and going to the horse races.

Mardi Gras Cake

Happy Fat Tuesday!

To celebrate, my little helpers and I made this fun and festive tricolored Mardi Gras Cake for dessert!
My kiddos were so excited to bake a Mardi Gras Cake this year!
Missouri doesn't really celebrate Mardi Gras here but we still had our cake and red beans a rice for dinner to celebrate then we made masks to wear!
I remember going to Mardi Gras parades in Florida and Alabama when I was younger but I never really got into them until I had kids and moved to Louisiana. Every single city celebrated Mardi Gras for weeks there with not just parades but parties, balls, luncheons, and all out events. 
Since we were in Louisiana for almost six years, we got to be pretty Mardi Gras crazy and we sure to miss the celebration!

Green Eggs and Ham Quiche | Dr Seuss Day

Happy Birthday to our favorite children's book author, Dr Seuss!

My family and I spent the last two weeks attending Dr Seuss events at our local libraries. We made crafts, red stories, ate treats, watched movies, and played games in honor of Dr Seuss. At home to celebrate I made this tasty Green Eggs and Ham Quiche for dinner and it was the perfect way to end a fun filled week!

Ava's school celebrated with a Dr Seuss week. She missed some days because of snow but got to wear green and have green eggs and ham for lunch on Fun Friday! 
We joined her for school lunch and had a blast!
Another day, another Dr Seuss party!

Serves 6
  • 1 frozen pie shell, thawed
  • 1 cup sliced deli ham, diced
  • 1 cup whole milk {or heavy cream}
  • 6 eggs, beaten
  • 1 cup shredded gruyere or white cheddar cheese, divided
  • green food coloring, as needed
  • salt/white pepper, to taste


  1. Preheat oven to 350°F.
  2. Whisk eggs and milk in a bowl. Add salt and pepper.
  3. Add 6 drops of green food coloring and whisk to combine. 
  4. Add more if you want it darker and brighter. 
  5. Sprinkle ham and half the cheese in the bottom of the pie crust.
  6. Pour egg mixture into the pie crust.
  7. Top with remaining 1/2 cup of cheese. 
  8. Bake for 35-45 minutes or until set. 
  9.  Cool slightly then slice into 6 servings. 
Whisk eggs and cream in a bowl.

You can either use a thawed premade pie shell or baked your own and let cool.
I used about 1 cup cubed deli ham for the quiche.
Sprinkle ham and half the cheese in the bottom of the pie crust.
Pour egg mixture into the pie crust.
Top with remaining 1/2 cup of cheese. 
Bake at 350 degrees for 35-45 minutes or until set. 
 Cool slightly then slice into 6 servings.
