Green Eggs and Ham Quiche | Dr Seuss Day

Happy Birthday to our favorite children's book author, Dr Seuss!

My family and I spent the last two weeks attending Dr Seuss events at our local libraries. We made crafts, red stories, ate treats, watched movies, and played games in honor of Dr Seuss. At home to celebrate I made this tasty Green Eggs and Ham Quiche for dinner and it was the perfect way to end a fun filled week!
Movie night at our library was "The Grinch"
Seuss Science Day at the Discovery Center children's museum in Springfield.
Red Fish, Blue Fish craft.
My two book lovin' cuties!
Can they get any cuter?!
Ava's school celebrated with a Dr Seuss week. She missed some days because of snow but got to wear green and have green eggs and ham for lunch on Fun Friday!
We joined her for school lunch and had a blast!
Another day, another Dr Seuss party!
What is your favorite Dr Seuss story?
How could we resist a fun photo with the Cat in the Hat himself?!

Ingredients:

Serves 6
  • 1 frozen pie shell, thawed
  • 1 cup sliced deli ham, diced

Directions:

  1. Preheat oven to 350°F.
  2. Whisk eggs and milk in a bowl. Add salt and pepper.
  3. Add 6 drops of green food coloring and whisk to combine.
  4. Add more if you want it darker and brighter.
  5. Sprinkle ham and half the cheese in the bottom of the pie crust.
  6. Pour egg mixture into the pie crust.
  7. Top with remaining 1/2 cup of cheese.
  8. Bake for 35-45 minutes or until set.
  9.  Cool slightly then slice into 6 servings.
Whisk eggs and cream in a bowl.
Add 6 drops of green food coloring.
 Whisk to combine.
Add more if you want it darker.
You can either use a thawed premade pie shell or baked your own and let cool.
I used about 1 cup cubed deli ham for the quiche.
Sprinkle ham and half the cheese in the bottom of the pie crust.
Pour egg mixture into the pie crust.
Top with remaining 1/2 cup of cheese.
Bake at 350 degrees for 35-45 minutes or until set.
Cool slightly then slice into 6 servings.

"Say!
I like green eggs and ham!
I do! I like them, Sam-I-am!
And I would eat them in a boat!
And I would eat them with a goat...
And I will eat them in the rain.
And in the dark. And on a train.
And in a car. And in a tree.
They are so good so good you see!"
- Dr Seuss

Last year I shared my Green Eggs and Ham Omelet recipe for Dr Seuss Day.

  1. Oh we love celebrating Dr. Seuss' birthday! The sad part is my son won't eat the green food we make.
