Creamy Deli Style Seafood Crab Salad

Creamy Seafood Salad is one of my favorite deli items from my local grocery store.
It is simple to make and the perfect flavorful salad to serve this summer. Make it with both shrimp and crab or just use extra flaked crab on it's own. Be sure to use Hellman's mayo. I tested many brands and it was the best for this recipe!
This is such a simple meal to prepare and 
delicious served with sliced watermelon and coleslaw and potato salad. 
The mini sandwiches are one of our favorite summer picnic foods!

Bomb Pop Tropical Mocktail

This frosty treat is a fun mocktail for the whole family to enjoy this summer.
My kids and I love Bomb Pop Popsicles and they are what inspired this frozen slushie. We made it red, white, and blue for 4th of July and it is our new favorite summer drink.
Stella loved her frozen drink, minus the Popsicle, as a breakfast slushie!
We love this refreshing drink during these hot summer months.

Patriotic Punch for 4th of July!

As a military family we enjoying making and serving patriotic dishes throughout the year. However, 4th of July is our favorite our great nation and the men and women who serve. So I have created a few new colorful patriotic drinks and treats to serve up this summer. This family friendly drink that I call Patriotic Punch is fun and fruity and made with just 3 simple ingredients. 
My little patriotic cuties!

Tomahawk Cowboy Ribeye Steak for Dad


Happy Father's Day!

Today we are serving a show stopper for dinner: Tomahawk Cowboy Ribeye Steak.
This steak is not only rich and delicious but a stunning piece of meat!
My husband and I have shared one before at a steak house and it was simply amazing so when I saw them available at our local meat counter I had to try it myself!

What is a Tomahawk Steak?

Tomahawk Steak, aka Cowboy Ribeye is a bone-in ribeye steak cut with the entire rib bone intact. It got it's name because it has the appearance of a Tomahawk axe. They are large enough to serve at least two and make for a beautiful, impressive plate presentation.

Busy Bee Brown Sugar and Honey Cupcakes #CupcakeLoversDay

Happy Cupcake Lovers Day!

These adorable summer themed cupcakes might just be my new favorite treat!
My Busy Bee Brown Sugar and Honey Cupcakes are made with all my favorite flavors from vanilla and brown sugar to honey and honey and more honey! The moist and delicious honey cake is topped with a simple to make brown sugar honey butter frosting and then drizzled with more honey and decorated with candy bees! Bake up a batch to celebrate today!

Ingredients:

Makes 1 dozen cupcakes
  • 1 1/2 cups flour
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup {1 stick} unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs, room temp
  • 1/2 cup buttermilk
  • 1/4 cup honey plus more for topping
  • 1 tbsp vanilla 
For the frosting:
  • 1 cup Brown Sugar Honey Butter, room temp {I used Chef Shamy brand}
  • 4 cups powdered sugar
  • 1-2 tbsp milk
*No honey butter? You sub 2 sticks of softened butter plus 2 tbsp honey

Directions: 

  1. Preheat the oven to 350°F.
  2.  Line a muffin pan with paper liners and set aside.
  3. In a medium bowl, mix together the flour, baking powder and salt. Set aside.
  4. In a large mixing bowl, add the softened butter and brown sugar and cream with a mixer until fluffy. 
  5. With the mixer running on low, add in the eggs then the honey, vanilla and buttermilk.
  6. Next, slowly pour in the dry ingredients and mix until combined.
  7. Scoop the batter into the prepared pan, filling 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. 
  10. To make the frosting: in a mixing bowl add honey butter and powdered sugar.
  11. Add milk in for the right consistency {thin enough to pipe}.
  12. Add to a piping bag then pipe the frosting using a wide tip to make a bee hive shape.
  13. Drizzle honey over the tops of the cupcakes and top with bee decorations {optional}.
  14. Serve and enjoy!
I found these cute bumblebee sugar decorations at William Sonoma. 
They inspired these fun honey cupcakes!
 You need 1/4 cup honey plus extra for drizzling .
I used my favorite American clover honey. I could eat it with a spoon!
 In a medium bowl, mix together the flour, baking powder and salt. Set aside.

 I love using buttermilk in place of milk in my baked goods. 
It makes them extra moist and tender.
I also make my own by adding 1 tbsp vinegar or lemon juice per 1 cup milk.
 With the mixer running on low, add in the eggs one at a time until incorporated. 
 Then add the honey, vanilla and buttermilk. Mix well.
 Next, slowly pour in the dry ingredients. 
Mix until combined. 
Scoop the batter into a prepared muffin pan, filling 3/4 full.
Bake at 350 degrees for 18-20 minutes, or until a toothpick inserted comes out clean.
Allow the cupcakes to cool in the pan for 5 minutes.
Then transfer to a wire rack to cool completely. 
 To make the frosting: in a mixing bowl add honey butter and powdered sugar.
 I made my frosting with this Cinnamon and Brown Sugar Honey Butter from Chef Shamy.
 Add milk in for the right consistency {thin enough to pipe}.
 Add to a piping bag, half at a time.
  Pipe the frosting using a wide tip to make a bee hive shape.
 Drizzle honey over the tops of the cupcakes and top with bee decorations.
 Serve and enjoy your sweet summertime treat!

Father's Day is this weekend and my kids and I are planning what to cook for Dad's special day.
