You are going to love these Pot Roast Foil Packs that I am sharing today for #CookoutWeek . They are a delicious summertime dinner, made either in the oven or on the grill. Simply add cubed beef and any chopped veggies you like, season them, add some gravy or butter if you like, and wrap up in foil. Once cooked they will be tender and flavorful and ready toe at!

Pot Roast Foil Packs

Makes 6 foil packs

Ingredients

  • Certified Angus Beef® 2lb roast trimmed and cubed {I used 1/2 a large 4lb roast}
  • 3 ears of corn shucked and halved
  • 1 1/2 lbs small red potatoes halved
  • 1 large yellow onion roughly chopped
  • 8 oz mushrooms quartered
  • 10 oz bag of baby carrots
  • 1 packet brown gravy prepared
  • seasoning to taste {I used Montreal Steak Seasoning}
  • 6 tbsp butter optional

Instructions

  • Preheat the oven to 400 degrees.
  • Prepare gravy mix according to package. Heat and set aside.
  • Using a 2lb beef roast {I cut my 4lb roast in half}, trim any visible fat off then cut into cubes.
  • Wash and chop all your veggies.  I like corn, potatoes, onion, mushrooms, and carrots.
  • Divide the beef and veggies into six equal portions,
  • Place them each onto their own sheet of aluminum foil.
  • Shake seasoning to taste all over the meat and veggies.
  • I like to add a tbsp of butter and a couple spoonfuls of gravy on top too.
  • Carefully bring up two of the sides of foil and fold-over to seal sides and ends.
  • Bake for 45 minutes.
  • You can also grill for 30 minutes over medium heat.
  • Remove from the oven and place on plates.
  • Serve with additional gravy on the side and let everyone open their own packets at the dinner table.

Start with a small beef roast and trim any fat off. I actually bought a 4-5lb chuck roast and cut it in half. I cooked half in the
Crock-pot and shredded it for another meal and then cubed the rest for this recipe. 
Wash and chop all your veggies. I like corn, potatoes, onion, mushrooms, and carrots.

 I love to use seasoning blends like this Montreal Steak Seasoning. 
How amazing do these look?
I like to add a couple spoonfuls of gravy on top.
You can also add a tbsp of butter.

Remove from the oven and place foil packs on plates.

    my favorite dish to eat at a cook out is grilled shrimp, so fast and easy. I should try your recipe, it looks like it would be easy on the grill.

    I think truly my all time favorite to eat at a cook out is a good old fashioned burger. There are some that really know how to make one that is juicy and really delicious. I am lucky enough to be married to one who knows how to cook the perfect burger. Lately he has been experimenting with stuffed burgers and they are heavenly!

    We grill and smoke food year round. This looks amazing. It is hard for me to name just one favorite but I think pork roast is way up on the top of the list. My fiance' loves to cook on the weekends and I have a cabinet decicated to nothing but spices and rubs. Thank you for the recipe!
