Hi there. I would try to find a similar cornbread mix that is gluten free. There are a lot of varieties at the store like Martha White and Krusteaz. Hope this helps!

Hi, I have never done that but it sounds delicious! I have had a Mexican corn casserole that was similar with ground beef, taco seasoning, peppers and onions with the cornbread mix and it was filling and delicious!

We dont put tge eggs in it but add 4 tbsps of green onions and add a half a cup of cheese. Its the best made with fresh corn! Yummy anyway u fix it!
