<div style="text-align: center;"><span style="font-family: inherit;">I love making soups, stews, and chili at home all year long!<br />
I came up with this hearty chili recipe when I was brainstorming pumpkin ideas. I decided to add ground bison since it is leaner than<br />
beef but has a&nbsp;</span>delicious<span style="font-family: inherit;">&nbsp;rich flavor (and it&#8217;s my husband&#8217;s favorite!). To get<br />
the sweet heat flavor I add&nbsp;chipotle chili powder to balance out the<br />
sweetness of the pumpkin.</span><br />
<span style="font-family: inherit;">The end result,&nbsp;</span><b>Pumped Up Sweet Heat Bison Chili</b>,<br />
&nbsp;is a thick and tasty chili that is packed full of flavor.</p>

<p>Even better, Bush&#8217;s Beans is hosting a Chili Cookoff &nbsp;Contest this month and since I love using their beans in my chili and soups {and I love a good cook-off} I knew I had to enter this recipe. It&#8217;s a winner in my book! Can&#8217;t wait to hear what you think about it!</p>

<div style="text-align: center;">My Montana raised foodie husband enjoys eating buffalo aka bison just like me.</div>
<div style="text-align: center;">&nbsp;I not only like the rich flavor but also it&#8217;s leaner and less greasy than beef.</div>
<div style="text-align: center;">Two of our local grocery stores here in Louisiana carry a few varieties of bison so I decided to switch it up and use ground bison for this chili instead of more traditional beef.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://2.bp.blogspot.com/-EtFYGFQsJ5Q/Vo9p_GegT_I/AAAAAAAAemQ/GXROWa_S0Q4/s1600/IMG_9777.JPG"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/01/IMG_9777-1024x682.jpg" width="320" height="213" border="0"></a></div>
<div style="text-align: center;">In a large skillet over medium heat, crumble ground bison and cook until browned.&nbsp;</div>
<div style="text-align: center;">Drain if needed and remove from heat.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://1.bp.blogspot.com/-AKq2AjW3Tn4/Vo9qAwQIvII/AAAAAAAAemc/UzZ134XFX6k/s1600/IMG_9779.JPG"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/01/IMG_9779-682x1024.jpg" width="213" height="320" border="0"></a></div>
<div style="text-align: center;">Dice 6 mini sweet peppers {love the color}&nbsp;</div>
<div style="text-align: center;">and a large yellow {Vidalia is my favorite} onion.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://1.bp.blogspot.com/-tDJC01UTAYE/Vo9qDTNSmEI/AAAAAAAAemo/9_ljSB1KILs/s1600/IMG_9781.JPG"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/01/IMG_9781-1024x682.jpg" width="320" height="213" border="0"></a></div>
<div style="text-align: center;">Add 2 tbsp olive oil to a large pot and heat over medium heat.</div>
<div style="text-align: center;">Add diced peppers and onions and cook until softened, about 10-15 minutes.</div>

<div style="text-align: center;">Add another 1 tbsp oil and garlic and stir until fragrant, about 1-2 minutes.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://4.bp.blogspot.com/-iq2jNeokLC8/Vo9qLxtpTbI/AAAAAAAAenM/MPbUwYJSVUg/s1600/IMG_9786.JPG"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/01/IMG_9786-1024x682.jpg" width="320" height="213" border="0"></a></div>
<div style="text-align: center;">Turn heat to medium low and add crushed tomatoes and tomato</div>
<div style="text-align: center;">&nbsp;sauce then stir in the drained Bush&#8217;s beans and green chiles.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://3.bp.blogspot.com/-BnJNBX8Zcbo/Vo9qLj8zDwI/AAAAAAAAenI/guqXo7SypNY/s1600/IMG_9787.JPG"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/01/IMG_9787-1024x682.jpg" width="320" height="213" border="0"></a></div>
<div style="text-align: center;">Now stir in pumpkin.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://3.bp.blogspot.com/-7a5crvpw9qQ/Vo9qQqcF4uI/AAAAAAAAeng/vYKwxomxKZc/s1600/IMG_9789.JPG"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/01/IMG_9789-1024x682.jpg" width="320" height="213" border="0"></a></div>

<div class="separator" style="clear: both; text-align: center;">Time for more salty and sweet.</div>
<div class="separator" style="clear: both; text-align: center;">I used pumpkin pie spice and chipotle chile&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">powder along with salt and pepper for this chili.</div>

<div class="separator" style="clear: both; text-align: center;">There are so many creative spice blends available at&nbsp;<a href="http://spiceblends.com/">Healthy Solutions</a>, but I was immediately drawn to their Savory Meatloaf blend. Being a southern girl I love a good meatloaf especially smothered in sauce and served with a side of potatoes! But I decided to challenge myself and make a creative and healthy meatloaf that still was &#8216;Slap your Mama good&#8217;! I have to say I think I hit the bulls-eye with this&nbsp;<b>Buffalo and Portobello Meatloaf with&nbsp;Jalapeno Cream Sauce and Roasted Rainbow Vegetables</b>! I would love to hear your feedback. Comment below and tell me what you think of this recipe and what spice blend and recipe you would try from&nbsp;<b>Healthy Solutions</b>.&nbsp;</div>

<div class="separator" style="clear: both; text-align: center;"><span style="font-family: inherit;">I was excited to try buffalo in this healthy meatloaf recipe since buffalo is not only leaner than the traditional beef used but also lower in calories, saturated fat, and is a great source of nutrients!&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://1.bp.blogspot.com/-9AWdPPrHEk8/VQ4q9nWQpDI/AAAAAAAAYJE/D2i0ta3yqtM/s1600/IMG_8429.JPG"><span style="font-family: inherit;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2015/03/IMG_8429-1024x682.jpg" width="320" height="213" border="0"></span></a></div>
<div class="separator" style="clear: both; text-align: center;"><span style="font-family: inherit;">Along with buffalo I added chopped meaty portobello mushrooms as a base.</span></div>
<div class="separator" style="clear: both; text-align: center;"><span style="font-family: inherit;">This not only adds a great flavor but also give the meatloaf some hearty texture.&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://3.bp.blogspot.com/-eKYFPnZpYRI/VQ4rMnxecGI/AAAAAAAAYJc/1nBlsyNgHfw/s1600/IMG_8437.JPG"><span style="font-family: inherit;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2015/03/IMG_8437-1024x682.jpg" width="320" height="213" border="0"></span></a></div>
<div style="text-align: center;"><span style="font-family: inherit;"><span style="color: #191919; line-height: 25px; text-align: center;">Heat a large skillet over medium heat and add 1 tbsp olive oil and chopped mushrooms.</span></span></div>
<div style="text-align: center;"><span style="font-family: inherit;"><span style="color: #191919; line-height: 25px; text-align: center;">Stir until softened and liquid is evaporated, about 10 minutes.</span></span></div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://4.bp.blogspot.com/-VKg_mpaSd3w/VQ4rNdMZvsI/AAAAAAAAYJk/XHFqo9WOYVY/s1600/IMG_8439.JPG"><span style="font-family: inherit;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2015/03/IMG_8439-1024x682.jpg" width="320" height="213" border="0"></span></a></div>
<div style="text-align: center;"><span style="color: #191919; line-height: 25px;"><span style="font-family: inherit;">Add garlic and more olive oil if needed. Stir until fragrant, about 2 minutes.&nbsp;</span></span></div>
<div style="text-align: center;"><span style="color: #191919; line-height: 25px;"><span style="font-family: inherit;">Remove from heat and let cool slightly.</span></span></div>

<div class="separator" style="clear: both; text-align: center;"><span style="font-family: inherit;">I love adding grated sweet onion to my meatloaf!</span></div>

<div style="text-align: center;"><span style="font-family: inherit;">In a large bowl add buffalo, eggs, milk, breadcrumbs, milk, Dijon, Worcestershire, and grated onion.</span></div>

<div style="text-align: center;"><span style="font-family: inherit;">Add finally add the mushroom mixture.&nbsp;</span></div>

<div style="text-align: center;"><span style="text-align: center;"><span style="font-family: inherit;">Grease pans.&nbsp;</span></span></div>
<div style="text-align: center;"><span style="text-align: center;"><span style="font-family: inherit;">Shape mixture into one large loaf in a 9X13 baking dish or&nbsp;</span></span></div>

<div style="text-align: center;"><span style="text-align: center;"><span style="font-family: inherit;">Bake at 375 degrees until browned and cooked through without any pink, about 45 minutes to an hour depending on the size of the meatloaf.&nbsp;</span></span></div>

<div style="text-align: center;"><span style="font-family: inherit;">To go with my meatloaf, I wanted to use a beautiful array of hearty veggies good for roasting.</span></div>
<div style="text-align: center;"><span style="font-family: inherit;">&nbsp;I chose rainbow carrots, red bell pepper strips, and (my favorite) asparagus.</span></div>
<div style="text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://2.bp.blogspot.com/-kUl_19txDts/VQ4sdzDWzLI/AAAAAAAAYLQ/L__J3_Rt4Y8/s1600/IMG_8463.JPG"><span style="font-family: inherit;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2015/03/IMG_8463-682x1024.jpg" width="213" height="320" border="0"></span></a></div>
<div style="text-align: center;"><span style="font-family: inherit;">Spread out in a single layer on a lined baking dish.&nbsp;Drizzle with olive oil and season with salt and pepper.&nbsp; When the meatloaf has 25 minutes left add veggies to the oven to roast.&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://1.bp.blogspot.com/-2fPKRRjCUZ8/VQ4sCGq2RBI/AAAAAAAAYKs/SAaSpnMkjNY/s1600/IMG_8458.JPG"><span style="font-family: inherit;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2015/03/IMG_8458-1024x682.jpg" width="320" height="213" border="0"></span></a></div>
<div style="text-align: center;"><span style="text-align: center;"><span style="font-family: inherit;">Now it&#8217;s time for my<b> Lighter Jalapeno Cream Sauce</b>!</span></span><br />
<span style="text-align: center;"><span style="font-family: inherit;">I lightened up this sauce by using skim milk and Greek yogurt as the base.</span></span></div>
<div style="text-align: center;"><span style="text-align: center;"><span style="font-family: inherit;">Seed and chop 2 jalapenos. I use my handy dandy jalapeno corer. Love that thing!</span></span></div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://4.bp.blogspot.com/-d8LsKP_vbxM/VQ4sKxYrNGI/AAAAAAAAYK0/JMcN1Oq4tkk/s1600/IMG_8460.JPG"><span style="font-family: inherit;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2015/03/IMG_8460-1024x682.jpg" width="320" height="213" border="0"></span></a></div>
<div style="text-align: center;"><span style="font-family: inherit;">Add jalapenos to a food processor and pulse until minced.</span></div>

<div style="text-align: center;"><span style="font-family: inherit;">Heat a small saucepan over medium and add butter.</span></div>
<div style="text-align: center;"><span style="font-family: inherit;">Once the butter is melted add the jalapeno to the pan and stir, cooking for 2 minutes.</span></div>

<div style="text-align: center;"><span style="font-family: inherit;">Add milk and whisk until thickened.</span></div>

<div style="text-align: center;">Like most foodies, I am a big fan of dining out. One of my favorite chain restaurants is <b>Ted&#8217;s Montana Grill</b>. Over the years, I have eaten at locations in Florida, Georgia, and D.C. Since my husband is from Montana and had never heard of Ted&#8217;s Montana Grill (gasp!), I knew I wanted to take him there one day. Luckily we celebrated our honeymoon in the Atlanta area so we visited the downtown location during our stay.<br />
<img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2013/05/IMG_0415-768x1024.jpg" width="304" height="405" border="0"><br />
Ted&#8217;s was started by well known businessman, Ted Turner. Ted&#8217;s is a big believer in sustainability and features the largest bison menu in the world! They are known for their free thick cut pickles that are brought to your table as a tasty little snack (instead of a boring ol&#8217; loaf of bread) and their fantastically messy 3 napkin burgers! You can choose either ground beef or bison and the toppings range from basics like grilled onions and melted cheese to unique&nbsp; and fun like tomato jam, blackberries, and roasted peppers. My favorite burger is the hearty <b>Kitchen Sink </b>featuring American cheese, grilled ham, smoky bacon, grilled onions and mushrooms topped<br />
with a fried egg. Check out my version of this &#8216;lick your fingers good&#8217; burger below!<br />
