One Pot Shrimp Scampi Pasta
Makes 4-6 servings
Ingredients

pkg Seapak Shrimp Scampi

lb
pasta {I used angel hair}
8
oz
white mushrooms
sliced
2
cups
spinach
2
cloves
garlic
pressed
1/2
Vidalia {or large yellow} onion
thinly sliced

container chicken broth
1/3
cup
shredded Parmesan cheese
salt and cracked black pepper
to taste
parsley
chopped for garnish
Instructions
Add chicken broth to a double boiler or large pot over medium high heat.
Bring to a boil then add pasta, mushrooms, spinach, garlic, and onion.
Mix until all ingredients are combined and submerged in the broth.
Turn down to medium heat and add frozen shrimp scampi and salt and pepper.
Cook at a simmer for 5-7 minutes or until shrimp is pink and most of the liquid is absorbed.
Take off the heat and stir in 1/3 cup shredded Parmesan cheese.
Add the hot pasta to plates and garnish with chopped parsley before serving.
