Irish Potato Nachos
Ingredients

bag small yellow potatoes
1/2
lb
deli sliced corned beef
chopped

cup
Swiss cheese
shredded
2
green onions
diced

vegetable oil

seasoning mix
I used Paula Deen's House (pepper, salt, garlic, onion )
1000
Island dressing
for drizzling (optional)
Sour cream
for topping (optional)
Instructions
Preheat oven to 425 degrees.
Wash and thinly slice potatoes.
Add potatoes to a bowl and drizzle on oil and seasoning. Toss to coat.
Line a baking sheet or two with aluminum and pour the potatoes on, spreading out evenly.
Roast for 10 minutes. Stir then roast for another 5 minutes.
Remove from oven and turn on broiler.
Either use another lined baking sheet or remove half the potatoes to a plate.
Start with 1/2 the roasted potatoes in the baking pan.
Add 1/2 the chopped corned beef and shredded cheese all over the potatoes.
Add the remaining potatoes on top then add remaining meat and cheese and sprinkle on green onions.
Broil for 1-2 minutes, until toppings are melted and warmed.
Remove from oven and serve immediately.
Scoop onto a large platter or individual plates and serve warm with 1000 Island dressing drizzled on top or sour cream on the side for dipping.
