Green Eggs and Ham Quiche

Serves 6


  • 1 frozen pie shell thawed
  • 1 cup sliced deli ham diced
  • 1 cup whole milk {or heavy cream}
  • 6 eggs beaten
  • 1 cup shredded gruyere or white cheddar cheese divided
  • green food coloring as needed
  • salt/white pepper to taste


  • Preheat oven to 350°F.
  • Whisk eggs and milk in a bowl. Add salt and pepper.
  • Add 6 drops of green food coloring and whisk to combine.
  • Add more if you want it darker and brighter.
  • Sprinkle ham and half the cheese in the bottom of the pie crust.
  • Pour egg mixture into the pie crust.
  • Top with remaining 1/2 cup of cheese.
  • Bake for 35-45 minutes or until set.
  • Cool slightly then slice into 6 servings.
