Mardi Gras Cake


  • 1 box white cake mix {I used French Vanilla}
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • green food/icing coloring
  • purple food/icing coloring
  • yellow food/icing coloring
  • 2 oz bag green candy melts
  • 2 oz bag purple candy melts
  • gold coin sprinkles


  • Preheat oven to 325 degrees {350 for glass pans}.
  • Grease your pan. I used a flower silicon bundt pan.
  • Mix together cake mix, eggs, water, and oil in a large bowl.
  • Beat with a mixer on medium speed for two minutes.
  • Pour batter into three separate bowls.
  • Add green color to one bowl, purple to another, and yellow to the last. Mix until fully combined and brightly colored.
  • Pour three colors into the baking pan, in multiple rows. You can swirl or leave in thick rows.
  • Bake for 38-42 minutes until golden and tooth pick in the center comes out clean.
  • Remove from oven and let cool.
  • When it is cooled completely remove from pan.
  • Melt green candy melts and purple candy melts in two bowls until smooth.
  • Drizzle both colors all over the top of the cake.
  • Finally add mini gold coin sprinkles all over.
  • Slice and serve.
