Baked Cheesy Black Eyed Pea Dip


  • 14 oz can black eyed peas drained
  • 1 cup corn cooked
  • 1/2 yellow onion diced
  • 2 tbsp salsa
  • 1/4 cup sour cream
  • 1/4 cup pimento cheese spread
  • 1 cup Cheddar cheese shredded
  • salt and pepper to taste
  • hot sauce optional


  • Preheat oven to 350 degrees.
  • In a large bowl add black eyed peas.
  • Using a fork or a masher, partial mash the black eyed peas, leaving some whole.
  • Add corn, onion, sour cream, salsa, pimento cheese and salt and pepper.
  • Mix together until combined then pour into an 8X8 baking dish.
  • Sprinkle with 1 cup shredded cheddar cheese.
  • Bake for 20 minutes until warm and the cheese is melted.
  • Serve warm or at room temp with chips for dipping.
