Preheat oven to 325 degrees.
Line a baking sheet with wax paper or a silicone mat.
In a large bowl add cereal, coconut, apples, pecans, cinnamon, and salt and mix well.
In another bowl add honey, oil, and vanilla and mix until smooth and combined.
Pour honey mixture on top of the cereal and toss well to combine.
Spread out the lined baking sheet.
Bake for 5 minutes then stir and bake for 3-5 more minutes until toasted and fragrant.
Let cool then scoop into a seal-able mason jar or container and eat within a week.
