<p style="text-align: center;">Corn is another popular summer veggie in our home and corn on the cob is my go to on busy nights when I need something fast.&nbsp;</p>
<p style="text-align: center;">This recipe is my easy version of <strong>Mexican Street Corn</strong> aka Elote. I like to make these on Taco Tuesday with enchiladas or tacos and rice.&nbsp;</p>
<p style="text-align: center;">The best thing is they can be cooked and prepared in just six minutes.</p>
<p style="text-align: center;">This messy but good side dish is a kid favorite and requested often by my whole family!</p>

<p><img decoding="async" class="aligncenter wp-image-29886" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-1024x683.jpg" alt="" width="400" height="267" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-1024x683.jpg 1024w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-300x200.jpg 300w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-768x512.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-1536x1024.jpg 1536w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-2048x1365.jpg 2048w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7285-scaled.jpg 1200w" sizes="(max-width: 400px) 100vw, 400px" /></p>
<p style="text-align: center;">Let freshly cooked corn cool down slightly on a plate.</p>
<p style="text-align: center;">I cut off the top, remove the silk and leave the husks, then microwave for 4-5 minutes.</p>
<p><img decoding="async" class="aligncenter wp-image-29885" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-1024x683.jpg" alt="" width="400" height="267" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-1024x683.jpg 1024w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-300x200.jpg 300w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-768x512.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-1536x1024.jpg 1536w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-2048x1365.jpg 2048w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7284-scaled.jpg 1200w" sizes="(max-width: 400px) 100vw, 400px" /></p>
<p style="text-align: center;">Meanwhile, in a small bowl mix together mayo and sour cream until combined.</p>
<p><img decoding="async" class="aligncenter wp-image-29888" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-683x1024.jpg" alt="" width="300" height="450" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-683x1024.jpg 683w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-200x300.jpg 200w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-768x1152.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-1024x1536.jpg 1024w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-1365x2048.jpg 1365w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7287-scaled.jpg 1200w" sizes="(max-width: 300px) 100vw, 300px" /></p>
<p style="text-align: center;">I like to pull the husks back but keep them attached for presentation.</p>
<p><img decoding="async" class="aligncenter wp-image-29889" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-1024x683.jpg" alt="" width="400" height="267" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-1024x683.jpg 1024w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-300x200.jpg 300w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-768x512.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-1536x1024.jpg 1536w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-2048x1365.jpg 2048w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7288-scaled.jpg 1200w" sizes="(max-width: 400px) 100vw, 400px" /></p>
<p style="text-align: center;">Spread the mayo mixture all over in a thick layer on each corn.&nbsp;</p>
<p><img decoding="async" class="aligncenter wp-image-29890" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-683x1024.jpg" alt="" width="300" height="450" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-683x1024.jpg 683w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-200x300.jpg 200w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-768x1152.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-1024x1536.jpg 1024w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-1365x2048.jpg 1365w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7291-scaled.jpg 1200w" sizes="(max-width: 300px) 100vw, 300px" /></p>
<p style="text-align: center;">I find it easier to stand them up of a plate and then use a rubber spatula to coat all side of the corn with the mayo.</p>
<p><img decoding="async" class="aligncenter wp-image-29891" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-1024x683.jpg" alt="" width="400" height="267" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-1024x683.jpg 1024w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-300x200.jpg 300w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-768x512.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-1536x1024.jpg 1536w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-2048x1365.jpg 2048w, https://www.4theloveoffoodblog.com/wp-content/uploads/2020/08/IMG_7294-scaled.jpg 1200w" sizes="(max-width: 400px) 100vw, 400px" /></p>
<p style="text-align: center;">I love using Mexican cotija cheese for coating the corn.</p>
<p style="text-align: center;">If you cannot find it at the grocery store then you can use grated parmesan cheese.</p>
