<h3 style="text-align: center;">Happy April Fool&#8217;s Day!</h3>
<p style="text-align: center;">My funny family went all out today. My girls even covered my door with balloons so I had a surprise when I opened it this morning! So naturally, I had to surprise them too. I made them a special &#8220;dessert&#8221; to enjoy before dinner last night. I prepared creamy, thick mashed potatoes and dark brown gravy and presented them scooped in a parfait dish. The final addition? A bright cherry (tomato) on top! Voila you have a Mashed Potato Ice Cream Sundae for April Fool&#8217;s Day!&nbsp;</p>

<div class="separator" style="clear: both; text-align: center;">Thanksgiving this year was different than any other. Since Ashton is in school and we just moved to Texas, we decided to stay home for Thanksgiving instead of spending the holiday with my family in Florida. This was a big change for me especially since it was the first time in my life that I did not spend Thanksgiving dinner with my parents. But thank goodness for modern technology and video chat! The girls and I saw them and wished them well, then we all spent a chill day at home watching parades and movies and of course, eating. But just because it wasn&#8217;t our traditional Thanksgiving didn&#8217;t mean we did not celebrate and cook a big meal!&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">I made all my favorites including <a href="https://www.4theloveoffoodblog.com/2013/09/crockpot-brown-sugar-pineapple-ham-for.html">Crock-Pot Ham</a>, <a href="https://www.4theloveoffoodblog.com/2017/11/soy-sauce-brined-turkey.html">roasted turkey</a>, stuffing, <a href="https://www.4theloveoffoodblog.com/2016/11/mamas-holiday-cranberry-sauce.html">cranberry sauce</a>, sweet potatoes, green bean casserole, and something new this year, <b>Crock-Pot Loaded Mashed Potatoes</b>.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">We gobbled down our dinner (ha!) and enjoyed leftovers for over a week! I swear I never get tired of eating Thanksgiving turkey!</div>
<div class="separator" style="clear: both; text-align: center;">These loaded potatoes are a breeze made in the Crock-Pot. It saves oven space and time and you simply just cook them, mix them, and serve when dinner is ready!&nbsp;</div>

<div class="" style="clear: both; text-align: center;"><span style="color: #274e13; font-family: inherit; font-size: medium;">I was so excited for this week b/c I knew I wanted to make one of my favorite appetizers, <strong>Irish Boxtys</strong>.</span></div>
<div class="" style="clear: both; text-align: center;"><span style="color: #274e13; font-family: inherit; font-size: medium;">&nbsp;In college I waited tables at a world famous (seriously!) Irish pub and steakhouse in Pensacola, FL called McGuire&#8217;s.&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: center;"><span style="font-family: inherit;"><span style="color: black; font-size: medium;"><a href="http://www.mcguiresirishpub.com/">www.mcguiresirishpub.com</a></span><span style="color: #274e13; font-size: medium;"><span style="color: black;">&nbsp;</span></span></span></div>
<div>&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><span style="font-family: inherit;"><span style="color: #274e13; font-size: medium;">To this day I still think Mcguire&#8217;s&nbsp;has the best burgers, prime rib, and pork chops&nbsp;that I have EVER had. Oh, and their <a href="https://www.4theloveoffoodblog.com/2013/09/mcguires-irish-pub-sunday-brunch-and.html">Frozen Irish Coffee</a> is AH-MAZING! Man, now I wish I was back home!</span></span></div>
<div style="text-align: center;">
<div class="separator" style="clear: both; text-align: center;"><span style="color: #274e13; font-family: inherit; font-size: medium;">They have an knock out appetizer called <strong>Irish Boxtys</strong>. They are garlic mashed potatoes rolled in seasoned bread crumbs then flash fried and served warm with dipping sauces. </span></div>
<div class="separator" style="clear: both; text-align: center;"><span style="color: #274e13; font-family: inherit;">&nbsp;</span><span style="color: #274e13; font-family: inherit; font-size: medium;">I recreated this easy dish for St Patty&#8217;s Day.
