<p style="text-align: center;">I also prefer to use thicker pre-shredded cheddar cheese (it usually has a flour coating on it).</p>
<p style="text-align: center;"><img decoding="async" class="aligncenter wp-image-40692" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1393.jpg" alt="" width="300" height="451" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1393.jpg 1200w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1393-200x300.jpg 200w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1393-768x1154.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1393-1022x1536.jpg 1022w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1393-150x225.jpg 150w" sizes="(max-width: 300px) 100vw, 300px" /></p>
<p style="text-align: center;">When I made this version above I shredded my own cheese and because it was so thin,</p>
<p style="text-align: center;">it clumped and did not have the texture I wanted for the spread.&nbsp;</p>
<p style="text-align: center;"><img decoding="async" class="aligncenter wp-image-40687" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388.jpg" alt="" width="400" height="266" srcset="https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388.jpg 1200w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388-300x200.jpg 300w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388-768x511.jpg 768w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388-680x450.jpg 680w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388-340x225.jpg 340w, https://www.4theloveoffoodblog.com/wp-content/uploads/2024/11/IMG_1388-150x100.jpg 150w" sizes="(max-width: 400px) 100vw, 400px" /></p>
<p style="text-align: center;">Drain your pimentos from the jar. Then chop and dice.</p>

<p style="text-align: center;">To jazz up this recipe from my normal basic pimento cheese I added seasonings, Dijon mustard, and hot sauce.</p>

<div class="separator" style="clear: both; text-align: center;">Growing up in the South, there were quite a few signature foods that I enjoyed eating and snacking on. <b>Hot Boiled Peanuts</b>, purchased at a produce stand down the street from my childhood home, were my favorite. I have many memories of my father and I stopping on the way home from work and school to pick up a paper bag full of the salty, tender peanuts. We couldn&#8217;t wait to eat them and hungrily would crack them open and nibble on them on the drive home.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9182-717x1024.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9182-717x1024.jpg" width="305" height="436" border="0"></a></div>
<div class="" style="clear: both; text-align: center;">
<p>Here in Louisiana, I still see <b>Hot Boiled Peanuts</b> for sale at festivals and in gas stations. Most are traditional {aka salted} or Cajun flavor. I prefer the salted variety, which is the recipe I share below. You can cook these easily at home either on the stove top or in a Crock-Pot. I love my slow cooker and since it is hot as the dickens outside, I prefer to use it and not to warm up my house with my stove. I hope you enjoy this recipe from my childhood. Comment below and let me know your favorite childhood recipe.</p>

<div style="text-align: center;">&nbsp;Rinse them well. Twice. They have a lot dirt and debris mixed in.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9146-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9146-1024x682.jpg" width="400" height="266" border="0"></a></div>
<div style="text-align: center;">&nbsp;Pour into slow cooker.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9149-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9149-1024x682.jpg" width="400" height="266" border="0"></a></div>
<div style="text-align: center;">&nbsp;Cover with water {about 6-8 cups}.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9154-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9154-1024x682.jpg" width="403" height="268" border="0"></a></div>
<div style="text-align: center;">&nbsp;I like to add a little kick to my peanuts. Not quite Cajun spicy flavor {I&#8217;m a sissy} but a little something. My favorite {in everything} is Tony Chachere&#8217;s Creole Seasoning. Crab boil packets, Old Bay, and red pepper flakes are all good choices too if you want to add some heat.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9155-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9155-1024x682.jpg" width="403" height="268" border="0"></a></div>
<div style="text-align: center;">&nbsp; &nbsp;Add salt. I add 1/4 cup but add up to 1/2 cup if you&#8217;d like.&nbsp;</div>
<div style="text-align: center;">*I have seen a recipe calling for a cup so go all out if you like extra salty!&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9160-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9160-1024x682.jpg" width="403" height="268" border="0"></a></div>
<div style="text-align: center;">&nbsp;Now add your extra seasoning. I add 1/4 cup again.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9164-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9164-1024x682.jpg" width="398" height="265" border="0"></a></div>
<div style="text-align: center;">&nbsp;Mix it all up and cover the slow cooker. Cook on low for 12-24 hrs.</div>
<div style="text-align: center;">The longer it cooks, the stronger the flavor. I meet in the middle and cook for 16 hrs or so.&nbsp;</div>
<div style="text-align: center;">You can let it sit in the warm brine after the cooker is off too.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9165-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9165-1024x682.jpg" width="400" height="266" border="0"></a></div>
<div style="text-align: center;">Be sure to check and add more water to cover the peanuts as they cook.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9179-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9179-1024x682.jpg" width="401" height="267" border="0"></a></div>
<div style="text-align: center;">&nbsp; To serve: using a slotted spoon scoop peanuts into bowls and serve warm.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9188-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9188-1024x682.jpg" width="397" height="264" border="0"></a></div>
<div style="text-align: center;">&nbsp; These are great for tailgating, picnics, road trips, you name it!<br />
This amount feeds a crowd.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9314-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9314-1024x682.jpg" width="401" height="267" border="0"></a><br />
These peanuts are not too salty or spicy, just right in my opinion.<br />
Adjust the seasonings as you like.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9201-682x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9201-682x1024.jpg" width="213" height="320" border="0"></a><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9305-682x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9305-682x1024.jpg" width="213" height="320" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">This is a snack the whole family will enjoy.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">Ava loves to crack the peanuts herself and will gobble up a whole basket!</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9315-1024x682.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/07/IMG_9315-1024x682.jpg" width="403" height="268" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">Have plenty of napkins ready and dig in!&nbsp;</div>

Dinner out, early fireworks, then bed for Ava and champagne and a movie for my parents and I. When midnight rolled around, my Mom and I were the only ones still awake to countdown to the New Year. Way different from a few years ago! Man, my 30s really are different than my 20s!</div>
<div style="text-align: center;">But, I wouldn&#8217;t trade my calmer life-and mommyhood- for anything!</div>
<div style="text-align: center;">~ <i><b>The only thing missing was my kiss at midnight from Ashton! ~</b></i><br />
<a style="margin-left: 1em; margin-right: 1em;" href="http://4.bp.blogspot.com/-4uZJBTBRrbk/Usi4bPI76QI/AAAAAAAAOVk/W9raUtvtDmI/s1600/IMG_3280.JPG"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/01/IMG_3280-1024x707.jpg" width="504" height="348" border="0"></a></div>
<div style="text-align: center;">On New Years Day, my family traditionally makes a big dinner, usually ham or turkey, and always served with <a href="https://www.4theloveoffoodblog.com/2012/08/mamas-hoppin-john-new-years-fun.html?m=1">Mama&#8217;s Hoppin&#8217; John</a>. This year we changed it up a bit. My Dad made prime rib and sweet potatoes, Mom made her <b>Hoppin&#8217; John</b> with rice and I made <a href="https://www.4theloveoffoodblog.com/2013/01/red-lobster-cheddar-bay-garlic-biscuits.html">Cheddar Bay Garlic Biscuits</a>, <a href="https://www.4theloveoffoodblog.com/2013/08/duffs-ace-of-cakes-egg-nog-and.html?m=0">Egg Nog</a>, and, for the first time,<b> Collard Greens</b>.</div>
<div style="text-align: center;"><b>Collards Greens</b> are traditionally served with Black Eyed Peas, or <b>Hoppin&#8217; John</b>, on New Years Day to bring good luck. <b>Collard Greens </b>represent wealth because they look like folded money. Well then, bring on the collard greens, I say!</div>
<div style="text-align: center;">As a Southern girl I know I&#8217;m supposed to love<b> Collards</b> but ever since I tasted an overcooked, burned batch 20+ years ago I haven&#8217;t tried them again. But my Uncle Mike, one of my cooking mentors, made some after Thanksgiving and they were delish! So using his recipe I made my first<b> pot of greens</b> on <b>New Years Day a</b>nd they were a hit! I recommend serving them with bread (I prefer cornbread or biscuits) to soak up the juices.</div>

<div style="text-align: center;">Any true Southern girl loves her some good ol&#8217; creamy <b>Chicken and Dumplings!</b>&nbsp;But until a couple months ago I unfortunately still didn&#8217;t have the perfect recipe. Sure I have tried tons of versions throughout my life but nothing was exactly what I was looking for. Then during my last month of pregnancy my friend Emma made me a batch of her amazing <b>Chicken and Dumplings.</b> It was so rich and creamy and unbelievably amazing. I was one happy pregnant lady! Thanks again Emma! Even better, Emma, a fellow new Mama, said this recipe was both fast and easy and cooked in just under 30 minutes. Since then I have made my version of this recipe numerous times and I am definitely hooked! It&#8217;s one of my go to dishes now, especially during the winter when it&#8217;s cold and dreary outside. <i>Enjoy this comforting dish tonight!&nbsp;</i></div>
