Fudge is at the top of my baking to do list every Christmas season and this year I wanted to make a fudge inspired by a favorite holiday drink: creamy Eggnog! 
This is a throwback post from 2018!
 
We were lucky enough to celebrate Christmas at Natural Bridge Caverns, in the scenic Texas Hill Country. We had the best time going on a hayride, listening to carolers, making s’mores,
exploring the caverns, climbing the tower and zipline and eating delicious fudge! I cannot wait until we can go back to Texas again and visit in the summer!

The fudge in their store was the best and my favorite flavor was the holiday special: Eggnog!

This recipe is inspired by that treat. I hope you enjoy as much as we did!

We spent the whole day and had the best time!

Every fudge you can imagine is available to sample and buy at their shop!

 

We sampled all our favorites.

Creamy Eggnog Fudge

Makes 1 pan, approx 24 squares

Ingredients

  • 1 cup eggnog
  • 2 cups white sugar
  • 2 tbsp unsalted butter
  • 1/2 cup white chocolate chips
  • 1/2 tsp nutmeg grated
  • 1 1/2 tsp vanilla
  • Christmas sprinkles optional

Instructions

  • Line a 8x8 pan with foil. Spray with non stick cooking spray.
  • In a saucepan add eggnog, butter, sugar, and chocolate chips.
  • Cook on medium low heat, stirring constantly, until simmering and melted.
  • Remove from heat and stir in vanilla and nutmeg.
  • Evenly spread into prepared pan.
  • Top with Christmas sprinkles.
  • Allow to cool to room temp.
  • Then cover and let harden and set in the fridge for at least 4 hours.
  • Cut into squares and enjoy!

 

All you need are six basic ingredients for this tasty treat!

In a saucepan add eggnog, butter, sugar, and chocolate chips.

Cook on medium low heat, stirring constantly.

It will come to a simmer and should be fully melted and combined.

Remove from heat and stir in vanilla and nutmeg.

Evenly spread into a greased and lined 8×8 pan.

Top with Christmas sprinkles.

Allow to cool to room temp.
Then cover and let harden and set in the fridge for at least 4 hours.

Cut into squares and enjoy!

It’s Fiesta time in San Antonio!

During our year of iin SA we enjoyed a lot of celebrations and culture in the big city especially their Fiesta celebration. The girls and I attended parades, collected medals, and made crafts for Fiesta. Scroll down to see the instructions for our DIY Celebration Suncatcher and our favorite Fiesta Memories and Medals. 

What is Fiesta?

Fiesta is one of America’s truly great festivals. It began more than 120 years ago as a way to honor the memory of the heroes of the Alamo and the Battle of San Jacinto. Today Fiesta celebrates the diversity and culture of San Antonio.

These colorful headbands worn during Fiesta are known as halos and are made
 of paper flowers and ribbon.
My beautiful Fiesta princess. 
There are so many parades and parties during Fiesta that it is hard to attend them all!
We went to the The Battle of Flowers Parade since it is the largest parade during Fiesta. It is also the only one in the country to be planned and directed completely by women and is second in size nationally only to the Tournament of Roses Parade.
Other notable Fiesta parades and events:
Even Dylan got to join in on the fun at the Fiesta Pooch Parade!
This was a walking parade through the beautiful downtown neighborhoods with your dogs and it was hands down one of my favorite events all year!
Everyone and I mean everyone has their own Fiesta medal available to purchase.
Many donate the profits to charity and most medals are around $5-12.
You are supposed to wear your medals on a sash across your chest during Fiesta events.
We collected quite a few medals during our first year and there are so many more I want to buy!
Some of our faves: the zoo, pooch parade, and SeaWorld.
Local businesses like Chick-fil-A, Whataburger, and Bill Miller BBQ 
put out fun medals every year too. 
We had the best time making Fiesta themed suncatchers last year to celebrate!
Check out our designs and the simple steps below.

What You Need:

  • Paper Plates
    Markers/Crayons
    Clear Contact Paper
    Stickers, Buttons, and Sequins
    Letter Stickers
    Ribbon

Directions:

  1. Cut out the center circle in the paper plate, without cutting through the outside rim.
  2. Color the rim of the plate and add stickers.
  3. Cut out a circle of contact paper large enough to cover the cut out center but smaller than the entire plate.
  4. Place the contact paper on the back of the plate with the sticky side facing up.
  5. Place sequins, buttons, and stickers all over the sticky paper. 
  6. We used Fiesta print ribbon in the center. You can also add letter stickers. 
  7. Now place another circle of contact paper on top, smoothing to get out any bubbles. 
  8. Trim any edges.
  9. Using a stapler or tape add festive rows of ribbon to the bottom.
  10. Using a hole punch, add a hole to the top center and attach a ribbon for hanging. 
Color the rim of the plate.
Decorate with stickers and spell out words. .
Little works of art!
