Bacon Lover's Loaded Cauliflower Casserole
Makes 6 servings
Ingredients

large head cauliflower
4
oz
1/2 a container bacon cream cheese spread
1/2
cup
sour cream
1/4
cup
green onions
diced
8
slices
bacon
I like brown sugar, thick cut, cooked crisp and diced
1
cup
Cheddar cheese
or a blend, shredded
1/4
cup
grated Parmesan cheese
1/2
tsp
garlic powder
salt/black pepper
to taste
optional: sub bacon salt for salt
Instructions
Preheat oven to 350 degrees.
Wash and cut off stem from cauliflower then cut into smaller florets.
Add to a steamer with water and steam until soft and a fork can pierce easily, about 30-40 minutes. Optional: you can also boil and drain.
Add cauliflower to a large bowl, then using a potato masher mash until mostly smooth (some small chunks will remain).
Mix in cream cheese spread, sour cream, green onion, Parmesan cheese, 6 slices of diced bacon, and seasonings.
Pour into an 8X8 baking dish.
Top with 1 cup shredded cheddar cheese and 2 slices of diced bacon.
Bake for 30 minutes then let cool slightly before cutting into portions and serving.
