Comfort food lover’s rejoice!
Everyone loves a good casserole and this one is a low carb alternative to the classic Loaded Potato Casserole. Mashed Cauliflower takes the place of the potato, then I added in creamy elements like sour cream and shredded cheese {you can never have too much cheese!} and an overload of bacon flavors including diced thick cut bacon, Bacon Salt, and Bacon cream cheese! The result is this scrumptious Bacon Lover’s Loaded Cauliflower Casserole.

Bacon Lover's Loaded Cauliflower Casserole

Makes 6 servings

Ingredients

  • 1 large head cauliflower
  • 4 oz 1/2 a container bacon cream cheese spread
  • 1/2 cup sour cream
  • 1/4 cup green onions diced
  • 8 slices bacon I like brown sugar, thick cut, cooked crisp and diced
  • 1 cup Cheddar cheese or a blend, shredded
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • salt/black pepper to taste
  • optional: sub bacon salt for salt

Instructions

  • Preheat oven to 350 degrees.
  • Wash and cut off stem from cauliflower then cut into smaller florets.
  • Add to a steamer with water and steam until soft and a fork can pierce easily, about 30-40 minutes. Optional: you can also boil and drain.
  • Add cauliflower to a large bowl, then using a potato masher mash until mostly smooth (some small chunks will remain).
  • Mix in cream cheese spread, sour cream, green onion, Parmesan cheese, 6 slices of diced bacon, and seasonings.
  • Pour into an 8X8 baking dish.
  • Top with 1 cup shredded cheddar cheese and 2 slices of diced bacon.
  • Bake for 30 minutes then let cool slightly before cutting into portions and serving.

This recipe is delicious, thank you! I am always looking for ways to make veggies palatable and this will be my go-to for cauliflower from now on.

🍓 Today is National Pick Strawberries Day. Going to local farms and picking fresh produce is one of our favorite family traditions. We were lucky enough to go strawberry picking at @eckertfarms last weekend. It was the biggest farm we have ever been to and quite a memorable experience! We left with a basket full of fresh juicy berries, strawberry cider and pastries from the market, and soaking wet clothes (but smiles on our faces). I'll share more about the hail storm that hit us in the middle of the field later... ⛈️😨 #nationalpickstrawberriesday #farmfresh #strawberry #eckerts #farmtotable #farmlife #illinois #springtime #familyfun #eckertfarms #eckertsmemories

❤️This week marks 2 years since our beloved cocker spaniel Dylan passed away. I created this free printable Rainbow Bridge poem on the blog in honor of Dylan.
