Baked Cheesy Black Eyed Pea Dip
Ingredients

can black eyed peas
drained

cup
corn
cooked
1/2
yellow onion
diced
2
tbsp
salsa
1/4
cup
sour cream
1/4
cup
pimento cheese spread
1
cup
Cheddar cheese
shredded
salt and pepper
to taste
hot sauce
optional
Instructions
Preheat oven to 350 degrees.
In a large bowl add black eyed peas.
Using a fork or a masher, partial mash the black eyed peas, leaving some whole.
Add corn, onion, sour cream, salsa, pimento cheese and salt and pepper.
Mix together until combined then pour into an 8X8 baking dish.
Sprinkle with 1 cup shredded cheddar cheese.
Bake for 20 minutes until warm and the cheese is melted.
Serve warm or at room temp with chips for dipping.
