Pumpkin Pudding Cookies

Ingredients

  • 3/4 cup Dixie Crystals brown sugar
  • 1 cup flour
  • 1/2 tsp baking soda
  • 3 oz Pumpkin Spice pudding mix
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1/4 cup Canola oil
  • 1 cup Pumpkin Spice baking chips (can sub white chocolate chips)

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl stir together dry ingredients: flour, baking soda, pudding mix, and brown sugar.
  • In a separate bowl add the eggs, pumpkin puree, and oil.
  • Whisk until smooth.
  • Slowly pour the dry ingredients into the wet, whisking as you combine.
  • Now add the baking chips, stirring in gently by hand.
  • Using a small scoop, scoop batter and add 4 rows of 3 on a lined baking sheet.
  • Bake for 12 minutes and let cool for 5 minutes before moving to a cooling rack .
  • Repeat with remaining batter.
