2large sweet potatoes peeled and cut into 1/2" slices
2ozStella® Gorgonzola or Blue Cheese {1/4 of a block}roughly chopped
1/4cuppecanschopped
1/4cupcranberry sauce {view my recipe here}
olive oil
salt and pepperto taste
Instructions
Preheat oven to 400 degrees
Brush each side of the rounds with olive oil and also sprinkle with salt and black pepper.
Spread out on a large lined or greased cookie sheet.
Bake for 15 minutes then turn over and bake for another 15 minutes.
Remove sweet potatoes from the oven and top each with a spoonful of crumbled cheese, a couple pieces of chopped pecans, and a drizzle of cranberry sauce.
Turn on the broiler and pop the baking pan bake in the oven for 1-2 minutes, just enough to melt the cheese and toast the nuts.
Serve warm or at room temp to all your party guests and enjoy!
