Gorgonzola and Cranberry Sweet Potato Rounds

Holiday parties are my favorite parties and just a few days ago I hosted my first of many holiday parties: a cookie exchange and tea party with my girls and their music class friends! We had such a great time and snacked all all sorts of delicious sweet treats. For my next party I plan on hosting a few friends for a Holiday Wine and Apps Party and Dirty Santa Gift Exchange. I love creating bite size savory and sweet goodies for my parties so you can skip cutlery and can mingle and nibble without having to fumble with large and messy food.

I made these Gorgonzola and Cranberry Sweet Potato Rounds specifically for my upcoming appetizer party. It is a festive hors d’oeuvre that looks beautiful on a serving tray and tastes amazing too! I teamed up with Stella® Cheese for this recipe and honestly I had a hard time choosing the perfect cheese out of all their amazing varieties but finally decided on Stella® Gorgonzola Cheese and Stella® Blue Cheese {they can both be used for this recipe}. I also picked up Stella® Parmesan Cheese and Stella® Goat Cheese because I couldn’t resist!Scroll down for the recipe!

Gorgonzola and Cranberry Sweet Potato Rounds

Ingredients

  • 2 large sweet potatoes peeled and cut into 1/2" slices
  • 2 oz Stella® Gorgonzola or Blue Cheese {1/4 of a block} roughly chopped
  • 1/4 cup pecans chopped
  • 1/4 cup cranberry sauce {view my recipe here}
  • olive oil
  • salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees
  • Brush each side of the rounds with olive oil and also sprinkle with salt and black pepper.
  • Spread out on a large lined or greased cookie sheet.
  • Bake for 15 minutes then turn over and bake for another 15 minutes.
  • Remove sweet potatoes from the oven and top each with a spoonful of crumbled cheese, a couple pieces of chopped pecans, and a drizzle of cranberry sauce.
  • Turn on the broiler and pop the baking pan bake in the oven for 1-2 minutes, just enough to melt the cheese and toast the nuts.
  • Serve warm or at room temp to all your party guests and enjoy!

I love all the delicious Stella® Cheeses especially the creamy Gorgonzola!
I knew it was the perfect topping for these savory sweet potato bites. 

For this recipe I use two large sweet potatoes, peeled.

Slice them in 1/2 inch slices.

Spread out on a baking sheet and brush with olive oil.

Sprinkle with salt and black pepper.

Spread out on a large lined or greased cookie sheet.

Bake for 15 minutes then turn over and bake for another 15 minutes

I used about 1/4 of a block {2oz} of  Stella® Gorgonzola cheese and I roughly chopped it.
You can also substitute Stella® Blue or Goat Cheese.

I made my Mama’s Cranberry Sauce for this recipe but you could also use premade cranberry sauce or even dried cranberries.

This colorful and festive appetizer is a cinch to make and a delight to eat!

Remove sweet potatoes from the oven and top each with a spoonful of crumbled Gorgonzola cheese.

Then add a few chopped pecans to each round.

Finally top with a drizzle of cranberry sauce. I use my Mama’s recipe here.

Serve warm or at room temp to all your party guests and enjoy!

One of my favorite quiet spots in all of Missouri - beautiful Roubidoux Springs in Waynesville, MO. We spent so many afternoons here fishing, splashing, hunting for treasures, skipping rocks, having picnics, and cuddling our dogs. I loved being able to visit again yesterday and enjoy the serene environment and warm sunshine. A must see! ☀️
