<div style="text-align: center;"><b>Uncle Mike&#8217;s Lump Crab Cakes with Remoulade</b> is a famous family recipe that everyone loves during our holiday meals. My Uncle makes the best crab cakes around and today I am sharing how to make them!</div>
<div style="text-align: center;">
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/1915467_194422245979_897451_n.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/1915467_194422245979_897451_n.jpg" width="320" height="274" border="0" data-original-height="518" data-original-width="604"></a></div>
<div class="separator" style="clear: both; text-align: center;">My Uncle Mike and I both love cooking and he is one of my biggest inspirations.</div>
<div class="separator" style="clear: both; text-align: center;">Today I am sharing a recipe of his that I love because it always reminds me of my home state, Florida.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><b>Uncle Mike&#8217;s Lump Crab Cakes with Remoulade</b>&nbsp;is one of those meals you talk about months later because it is <i>that</i> good. I was lucky enough to get my Uncle to share his recipe with me and even though they may not have been as <span style="text-decoration: line-through;">pretty</span> good as his when I made them, they are pretty darn close!&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">Give them a try and let me know what you think!&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/17360_279968075979_4385174_n.jpg" width="239" height="320" border="0" data-original-height="604" data-original-width="452"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/1915467_194408970979_2046114_n.jpg" width="213" height="320" border="0" data-original-height="603" data-original-width="402"></div>
<div class="separator" style="clear: both; text-align: center;">Mike is self taught like me and him and we love cooking together during our holiday gatherings.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/181960_497047945979_3396450_n.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/181960_497047945979_3396450_n.jpg" width="240" height="320" border="0" data-original-height="720" data-original-width="540"></a></div>
<p>&nbsp; My Uncle and my Aunt Candie are both big Tampa Bay Buccaneer fans.<br />
So, of course, I had to get him a Bucs Chef hat!</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/401646_10150990732335980_917682857_n.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2019/07/401646_10150990732335980_917682857_n.jpg" width="320" height="213" border="0" data-original-height="640" data-original-width="960"></a></div>
<p>I am blessed to have such a wonderful family and my awesome<br />
&nbsp;Uncle even officiated our wedding 7 years ago!</p>

<div class="separator" style="clear: both; text-align: center;">Christmas brings back lots of wonderful memories and of course reminds me of my family that is no longer with us. My Grandma passed away after a courageous battle with cancer a couple years ago. We were lucky enough to share many Christmases together including Ava&#8217;s first Christmas.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_0095-1024x683.jpg"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_0095-1024x683.jpg" width="397" height="264" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div class="separator" style="clear: both; text-align: center;">My Grandma was Japanese and introduced me to so many delicious Asian foods that I still enjoy with my family today. One dessert that I was never able to make with my Grandma was<b> Japanese Cheesecake</b>. So for Inka Tour&#8217;s&nbsp;<b><a href="http://www.inkastour.com/">24 Days of Christmas Around the World</a></b>, I decided to represent Japan and share <b>Grandma&#8217;s Japanese Cheesecake</b> with y&#8217;all.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_0799-1024x682.jpg"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_0799-1024x682.jpg" width="394" height="262" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div class="separator" style="clear: both; text-align: center;">This cheesecake is different than your traditional rich and thick cheesecake. <b>Japanese Cheesecake</b> is light and airy. It puffs up like a souffle and has the look and texture of a sponge cake. I line the bottom of mine with raisins which gives it that flavor of rice pudding.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_0178.jpg"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_0178.jpg" width="403" height="268" border="0" data-original-height="213" data-original-width="320"></a></div>
<div class="separator" style="clear: both; text-align: center;">I know Grandma would have loved it and I am sure you and your family will too.</div>
<p style="text-align: center;"><a name="more"></a></p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_3517-1024x768.jpg"><img decoding="async" class="aligncenter" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/12/IMG_3517-1024x768.jpg" width="397" height="298" border="0" data-original-height="1200" data-original-width="1600"></a></div>

<h3 style="text-align: center;">Ingredients:</h3>
<div style="text-align: center;"><i><b>Makes approx 6-8 servings </b></i></div>
<ul style="text-align: center;">
<li>4 stalks celery, chopped</li>
<li>4 carrots, peeled and chopped</li>
<li>1 small-medium sweet onion (or 1/2 large Vidalia onion), chopped</li>
<li>1 red bell pepper, chopped</li>
<li>1 yellow or orange bell pepper, chopped</li>
<li>8oz mushrooms, sliced</li>
<li>1 lb ground beef (I use ground chuck)</li>
<li>1 lb ground Italian sausage (or ground pork)</li>
<li>3 cloves garlic, pressed</li>
<li>2 tbsp Italian seasoning</li>
<li>4 bay leaves</li>
<li>1 tsp nutmeg</li>
<li>28oz can crushed tomatoes (I recommend San Marzano)</li>
<li>12 oz can tomato paste</li>
<li>3 cups heavy cream</li>
<li>2 tbsp olive oil</li>
<li>salt/black pepper, to taste</li>
<li>cooked pasta (I prefer pappardelle or fettuccine)</li>
<li>Parmesan cheese, for serving (optional)</li>
</ul>
<h3 style="text-align: center;">Directions:</h3>
<ol style="text-align: center;">
<li>&nbsp;Place celery, carrots, onion, and bell peppers in a large food processor. Pulse until minced and mixed well. *Alternately you can finely mince by hand.</li>
<li>Add olive oil to a large double boiler or soup pot and heat over medium.</li>
<li>Add minced vegetables and cook until softened about 5-8 minutes.</li>
<li>Stir in garlic and seasonings and mix well.</li>
<li>Next, add crushed tomatoes, sliced mushrooms, and tomato paste.</li>
<li>Meanwhile, in a large skillet add ground beef and ground sausage or pork and break apart into crumbles<br />
while cooking. Cook, stirring, until no longer pink. Drain any grease.</li>
<li>&nbsp;Stir into the simmering pasta sauce.</li>
<li>Put lid on the pot and lower heat to med-low.</li>
<li>Cook at a simmer for 1-1 1/2 hrs.</li>
<li>Stir in heavy cream and cook for another 20 minutes.</li>
<li>Serve ladled over hot pasta with Parmesan cheese on top with an Italian Salad on the side.&nbsp;</li>
</ol>
<div style="text-align: center;"><i><b>Leftovers are great but this sauce freezes well too! </b></i></div>
<div style="text-align: center;"><img decoding="async" style="border: 0pt none;" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/spoon-7.png" align="middle"></div>
<div class="separator" style="clear: both; text-align: center;">&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_5277-768x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_5277-768x1024.jpg" width="240" height="320" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">The basic ingredients for this sauce are good quality San Marzano crushed tomatoes and tomato paste, veggies, ground meat, and pasta!</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_20141008_193501-768x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_20141008_193501-768x1024.jpg" width="240" height="320" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">I&#8217;ve also found this pasta and used it too.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">Even bow tie pasta works but I like the thicker long pasta better!</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_1948-768x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_1948-768x1024.jpg" width="240" height="320" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">Cook the ground meat in a large skillet over medium heat.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_1949-1024x768.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_1949-1024x768.jpg" width="320" height="240" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">Cook, stirring, until cooked through and no longer pink.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">Drain.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_1944-1024x768.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/11/IMG_1944-1024x768.jpg" width="320" height="240" border="0"></a></div>
<div style="text-align: center;">Meanwhile, finely mince celery, onion, bell peppers, and carrots in a food processor.</div>

<div style="text-align: center;">Add to a double boiler with olive oil heated over medium heat.</div>
<div style="text-align: center;">Cook for 5-8 minutes until softened.</div>

<div style="text-align: center;">Stir in garlic and seasonings and mix well.<br />

Dinner out, early fireworks, then bed for Ava and champagne and a movie for my parents and I. When midnight rolled around, my Mom and I were the only ones still awake to countdown to the New Year. Way different from a few years ago! Man, my 30s really are different than my 20s!</div>
<div style="text-align: center;">But, I wouldn&#8217;t trade my calmer life-and mommyhood- for anything!</div>
<div style="text-align: center;">~ <i><b>The only thing missing was my kiss at midnight from Ashton! ~</b></i><br />
<a style="margin-left: 1em; margin-right: 1em;" href="http://4.bp.blogspot.com/-4uZJBTBRrbk/Usi4bPI76QI/AAAAAAAAOVk/W9raUtvtDmI/s1600/IMG_3280.JPG"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/01/IMG_3280-1024x707.jpg" width="504" height="348" border="0"></a></div>
<div style="text-align: center;">On New Years Day, my family traditionally makes a big dinner, usually ham or turkey, and always served with <a href="https://www.4theloveoffoodblog.com/2012/08/mamas-hoppin-john-new-years-fun.html?m=1">Mama&#8217;s Hoppin&#8217; John</a>. This year we changed it up a bit. My Dad made prime rib and sweet potatoes, Mom made her <b>Hoppin&#8217; John</b> with rice and I made <a href="https://www.4theloveoffoodblog.com/2013/01/red-lobster-cheddar-bay-garlic-biscuits.html">Cheddar Bay Garlic Biscuits</a>, <a href="https://www.4theloveoffoodblog.com/2013/08/duffs-ace-of-cakes-egg-nog-and.html?m=0">Egg Nog</a>, and, for the first time,<b> Collard Greens</b>.</div>
<div style="text-align: center;"><b>Collards Greens</b> are traditionally served with Black Eyed Peas, or <b>Hoppin&#8217; John</b>, on New Years Day to bring good luck. <b>Collard Greens </b>represent wealth because they look like folded money. Well then, bring on the collard greens, I say!</div>
<div style="text-align: center;">As a Southern girl I know I&#8217;m supposed to love<b> Collards</b> but ever since I tasted an overcooked, burned batch 20+ years ago I haven&#8217;t tried them again. But my Uncle Mike, one of my cooking mentors, made some after Thanksgiving and they were delish! So using his recipe I made my first<b> pot of greens</b> on <b>New Years Day a</b>nd they were a hit! I recommend serving them with bread (I prefer cornbread or biscuits) to soak up the juices.</div>

<div style="text-align: center;">This Thanksgiving we made a a ton of food, as usual, and since there were only 5 of us (and a baby!) eating, we had<br />
lots of leftovers. No biggie though, Thanksgiving leftovers are my favorite and every year my Dad makes his legendary <b>Kentucky Hot Brown<br />
Sandwiches</b> with the leftover turkey, gravy, and mashed potatoes. Not sure where he learned the recipe but I am assuming our family, including his two sister&#8217;s in Kentucky showed him the famous sandwich from Louisville, KY.</div>
<div style="text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="http://1.bp.blogspot.com/-0wjhfnNNTig/UqK54tPn36I/AAAAAAAANt0/4-u39kP6q0k/s1600/IMG_2797.JPG"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2013/12/IMG_2797-1024x768.jpg" width="419" height="314" border="0"></a></div>
<div style="text-align: center;">&nbsp; These loaded, hearty sandwiches are served open faced and piled high with mashed potatoes, turkey, bacon, cheese, tomatoes, and gravy. Oh, and more cheese! Jeez, eat one of these and you will be full for the rest of the day. Just like eating a Thanksgiving Day meal!</div>

<span style="font-size: large;"><b>Mama&#8217;s Hoppin&#8217; John New Years recipe:</b></span></div>
<div style="text-align: center;">It&#8217;s a tradition in my family to eat Hoppin&#8217; John on New Year&#8217;s Day.&nbsp;</div>
<div style="text-align: center;">Here&#8217;s a little tidbit from Wikipedia:</div>
<div style="text-align: center;"><i>&nbsp;&#8220;Throughout the United States, eating Hoppin&#8217; John on New Year&#8217;s Day is thought to bring a prosperous year filled with luck. The peas are symbolic of pennies or coins, and a coin is sometimes added to the pot or left under the dinner bowls. Collard greens, mustard greens, turnip greens, chard, kale, and cabbage etc. along with this dish are supposed to also add to the wealth since they are the color of money. Another traditional food, cornbread can also be served to represent wealth, being the color of gold. On the<br />
day after New Year&#8217;s Day, leftover &#8220;Hoppin&#8217; John&#8221; is called &#8220;Skippin&#8217;<br />
Jenny,&#8221; and further demonstrates one&#8217;s frugality, bringing a hope for an<br />
even better chance of prosperity in the New Year.&#8221;</i></div>
