Daddy’s Kentucky Hot Brown Sandwich

This Thanksgiving we made a a ton of food, as usual, and since there were only 5 of us (and a baby!) eating, we had
lots of leftovers. No biggie though, Thanksgiving leftovers are my favorite and every year my Dad makes his legendary Kentucky Hot Brown
Sandwiches
with the leftover turkey, gravy, and mashed potatoes.Not sure where he learned the recipe but I am assuming our family, including his two sister’s in Kentucky showed him the famous sandwich from Louisville, KY.
 These loaded, hearty sandwiches are served open faced and piled high with mashed potatoes, turkey, bacon, cheese, tomatoes, and gravy. Oh, and more cheese! Jeez, eat one of these and you will be full for the rest of the day. Just like eating a Thanksgiving Day meal!

Daddy's Kentucky Hot Brown Sandwich

Makes 6 open faced sandwiches

Ingredients

  • 6 slices of bread toasted
  • 12 thick cut slices of turkey
  • 3-4 cups of mashed potatoes
  • 1 beefsteak tomato sliced
  • 2 cups gravy we use brown, but turkey gravy is also tasty
  • 12 slices bacon cooked crisp
  • 3 cups shredded cheese I used mixed or Cheddar

Instructions

  • Preheat oven to 350 degrees.
  • Lay 6 slices of toasted bread on a baking sheet.
  • Spread approx 1/2 cup (or more if you want!) of mashed potatoes on top of each bread slice.
  • Top with 2 slices of turkey on each.
  • Add 1/4 cup shredded cheese on top of turkey.
  • Add two slices crisp bacon, crisscrossed on top.
  • Add one or two thick slices of tomato on top.
  • Now add a ladle of gravy on each.
  • Finally add remaining shredded cheese on top of each.
  • Bake in the oven for about 10-15 min or until warmed through and the cheese is melted.
  • Serve warm with additional gravy on top if you would like!

 Save room for dessert  (hahahaha just kidding!)

The beautiful purple bouquet Ashton had delivered for Ava and I. We are so lucky to have him in our lives! Thanksgiving Day was nice but not the same without him!

Leftover sliced roasted turkey, mashed potatoes, and brown gravy make up the base of this open faced sandwich.
 
Bacon makes everything better, right?
 
 
 The perfect comfort food on a cold night! No leftovers? Deli sliced turkey is just as good!

    That is NOT a Kentucky Hot Brown! Had them at the Brown Hotel in Louisville Kentucky- and that what ever is not even close !
