I love making soups, stews, and chili at home all year long!
I came up with this hearty chili recipe when I was brainstorming pumpkin ideas. I decided to add ground bison since it is leaner than
beef but has a delicious rich flavor (and it’s my husband’s favorite!). To get
the sweet heat flavor I add chipotle chili powder to balance out the
sweetness of the pumpkin.
The end result, Pumped Up Sweet Heat Bison Chili,
is a thick and tasty chili that is packed full of flavor.

Even better, Bush’s Beans is hosting a Chili Cookoff Contest this month and since I love using their beans in my chili and soups {and I love a good cook-off} I knew I had to enter this recipe. It’s a winner in my book! Can’t wait to hear what you think about it!

My Montana raised foodie husband enjoys eating buffalo aka bison just like me.

I not only like the rich flavor but also it’s leaner and less greasy than beef.

Two of our local grocery stores here in Louisiana carry a few varieties of bison so I decided to switch it up and use ground bison for this chili instead of more traditional beef.

It’s time for a recipe challenge, y’all!

You know I love a good competition, especially when it involves food! I was delighted to be part of the 2015 Blogger Recipe Challenge with Healthy Solutions Spice Blends and I can’t wait for you to see what I cooked up!

There are so many creative spice blends available at Healthy Solutions, but I was immediately drawn to their Savory Meatloaf blend. Being a southern girl I love a good meatloaf especially smothered in sauce and served with a side of potatoes! But I decided to challenge myself and make a creative and healthy meatloaf that still was ‘Slap your Mama good’! I have to say I think I hit the bulls-eye with this Buffalo and Portobello Meatloaf with Jalapeno Cream Sauce and Roasted Rainbow Vegetables! I would love to hear your feedback. Comment below and tell me what you think of this recipe and what spice blend and recipe you would try from Healthy Solutions.

I used one packet of Healthy Solutions Savory Meatloaf Spice Blend

to season my meatloaf.

I am a huge fan of buffalo (aka bison) and serve buffalo burgers to my family often. The rich flavor and considerably less grease make it a winner in my book.

I was excited to try buffalo in this healthy meatloaf recipe since buffalo is not only leaner than the traditional beef used but also lower in calories, saturated fat, and is a great source of nutrients!

Along with buffalo I added chopped meaty portobello mushrooms as a base.

This not only adds a great flavor but also give the meatloaf some hearty texture.

Like most foodies, I am a big fan of dining out. One of my favorite chain restaurants is Ted’s Montana Grill. Over the years, I have eaten at locations in Florida, Georgia, and D.C. Since my husband is from Montana and had never heard of Ted’s Montana Grill (gasp!), I knew I wanted to take him there one day. Luckily we celebrated our honeymoon in the Atlanta area so we visited the downtown location during our stay.

Ted’s was started by well known businessman, Ted Turner. Ted’s is a big believer in sustainability and features the largest bison menu in the world! They are known for their free thick cut pickles that are brought to your table as a tasty little snack (instead of a boring ol’ loaf of bread) and their fantastically messy 3 napkin burgers! You can choose either ground beef or bison and the toppings range from basics like grilled onions and melted cheese to unique and fun like tomato jam, blackberries, and roasted peppers. My favorite burger is the hearty Kitchen Sink featuring American cheese, grilled ham, smoky bacon, grilled onions and mushrooms topped
with a fried egg. Check out my version of this ‘lick your fingers good’ burger below!
