I first came across a version of this recipe in my May Happy Mommy Box.
The blog, Pinch of Yum featured her recipe for Homemade Ramen in the booklet included in the box. I made it for family dinner, tweaking the recipe slightly and loved how it turned out! I have since made it a couple more times, adding my favorite Miso Ginger Broth from Trader Joe’s and sliced Japanese fish cake and pickled radish on top. The vegetables you add are up to you but I love the crunchy kale and shredded carrots. I used dried lobster mushrooms once (rehydrated in the simmering broth) and sliced shiitake mushrooms the other times. Both were delicious! The addition of whisked egg is something I have always added to ramen noodles (back in my poor college days they were a staple of my diet) and I love the texture and taste it adds to the soup. This hearty meal is perfect for Meatless Monday or any day you want a veggie packed flavorful meal!

I recently joined a fun website called Crowdtap, where you can do reviews, surveys, and parties on new products. I was lucky enough to be chosen to try the new Campbell’s Skillet and Slow Cooker Sauces this month. They sent me a coupon to try one of each. I do like to create my own sauces, since I have found most packaged brands to be bland and unoriginal, but I decided to check out what Campbell’s had to offer. I was pleasantly surprised when I found these sauces on the shelf at my local grocery store. Talk about inspired flavors: Apple Bourbon Barbecue, Sweet Korean BBQ, and my favorite Thai Curry! I was excited to get home and try it out because seriously it doesn’t get any easier than cook your meat, add the sauce and veggies, and you’re done!

This isn’t some simple lackluster sauce either, y’all! The Thai Curry flavor is seasoned with lemongrass and basil and blended with coconut milk, cilantro, and jalapenos. The package recommends adding chicken but I decided to try shrimp and some fresh sliced veggies. The added touch of toasted coconut and jasmine rice was inspired by my favorite dish at The Cheesecake Factory, Bang Bang Chicken and Shrimp!

Be sure to pick up a pack or two of these flavor packed sauces next time you’re at the store.

You won’t be disappointed!

Ingredients:

Makes 2 large servings

12-16oz large or extra large shrimp, peeled

1/2 yellow onion, sliced

1/2 red bell pepper, sliced

1 cup peas

1 cup baby carrot peels (see pic below)

1/4 cup green onions, chopped

2 cups Jasmine rice, cooked

9oz pkg Campbell’s Skillet Sauce in Thai Curry flavor

1/2 cup shredded coconut, toasted

1 tbsp oil, for saute

Directions:

Add oil to a skillet over medium and add shrimp. (I used olive oil, canola/vegetable would work too).

Cook, tossing until pink and cooked through, just a few minutes.

Add Thai Curry Sauce, onions, peppers, carrots, and peas. Stir to combine. Turn down heat to low, cover, and simmer for 10 minutes.

Meanwhile, in a small dry skillet toast shredded coconut until golden. Reserve in a bowl for topping.

To plate: Add a heaping serving of the shrimp and curry sauce and top with a few scoops of rice. Sprinkle a good amount of toasted coconut over everything and then add some green onions to garnish.

This toasted coconut really makes the dish so do not skip this ingredient! Simply spread coconut in a even layer in a dry skillet over medium and toast until golden, stirring often.

I use baby carrots in a lot of my recipes and what I like to do sometimes is, using a vegetable peeler, make strips or peels of the carrots and add to the dish. That way you get the color and flavor but don’t have to spend the time cooking a crunchy carrot.

I prepare all my sliced veggies in advance. I usually had sliced and diced onions ready to go in baggies. I use onions in everything!

I used peeled and deveined extra large size shrimp.

I gave them a rinse, patted dry, and removed the tails.

Add the shrimp to a hot skillet with 1 tbsp of oil. Saute until pink.

Toss shrimp to cook both sides, it should only take a few minutes.

Add the package of Campbell’s Thai Curry Sauce. No other seasonings needed!

This sauce is flavorful and delicious! My new favorite.

Mix in all your sliced veggies and turn heat to low.

Cover and cook for 10 minutes so the veggies can soften and the flavors can meld.

Add the sauce to a plate and top with a scoop or two of fragrant Jasmine rice.

Sprinkle crunchy, toasted coconut over the sauce and add a garnish of colorful green onions.

Serve warm and try not to lick the plate! This is seriously restaurant quality folks! Yum!

Happy Meatless Monday!

I was craving a stir fry the other night so I threw this together with the ingredients I had in the fridge. This was the first time I have ever made a stir fry without meat and I was pleasantly surprised at how delicious and filling it was! This was also the first time I made crispy tofu.
I have had it and loved it at restaurants but I finally attempted it at home and it came out perfect!
This dish was a home run all the way!

Because of the prep involved with chopping all the veggies I like to prepare (peel and chop) them all before

and add them to a large freezer bag (except green onions and baby corn) and refrigerate until ready to cook.

This saves lots of time later!

I have never mastered crispy tofu until now!

The trick: Firm or extra Firm Tofu, completely drained and pressed with a stack of paper towels to remove extra liquid!

Then just simply cube and sear on both sides in a hot non stick skillet with a tbsp of oil. Drain on a plate until ready to mix into stir fry.

Devo Olive Oil has long been a favorite in my kitchen and I was stocked this month when they went me a sample of their Japanese Toasted Sesame Oil to try. Perfect for this stir fry! However, I did use only a tbsp of Sesame Oil and a tbsp of canola oil because the flavor can be overpowering if you use too much.

Check out Devo Olive Oil here

I used a 1/2 pkg of my favorite Oriental Egg Noodles (find them at most grocery stores).

I use these noodles in a lot of my recipes including PF Changs Spicy Pork Dan Dan Noodles and Thai Coconut Curry Soup.

Cook according to pkg instructions, drain, and reserve 1/2 cup pasta water.

Here’s a tip: When cooking pasta, that may sit for a while and possibly stick together, before incorporating with the rest of the ingredients, reserve 1/2 cup pasta water before draining the pasta. This way before serving or mixing the pasta with the rest of the ingredients, you can pour the reserved water over the sticky pasta and toss and loosen easily!

Add 1 tbsp sesame oil to a non stick skillet (or a Wok) over medium heat. Add all chopped veggies (except baby corn and green onions). Saute until softened but still crisp, about 5-7 minutes. Add garlic, ginger, and baby corn (you can add more oil if needed) and cook for another 30 seconds. Then add crispy tofu, noodles, and Teriyaki sauce to coat. Mix well. Remove from heat, garnish with diced green onions, and serve hot.

My husband got me hooked on Mr Yoshida’s sauces a few years ago and let me tell you they are delicious. We tend to use it as a marinade or dipping sauce but I thought I would toss it with the noodles in this stir fry and it was perfect! Not too thick and heavy with a sweet tangy flavor.

Mixed with the fresh ginger and garlic and it was the perfect addition to my stir fry!

I kid you not this may be one of the best stir fry dishes I have ever eaten!

Like I have said before, you don’t even miss the meat!

Last week was a busy week so I was unable to post this recipe during my Asian Food Week in honor of my Grandma Kimiyo who passed away two weeks ago. But I just had to share this recipe with you, since it’s one of my very favorite restaurant copycat recipes. My Gma was a HUGE fan of PF Chang’s and their sister bistro Pei Wei (really my whole family loves them!) and this spicy noodle dish called Dan Dan Noodles is our #1 most ordered item.

Note: PF Changs uses ground chicken in their dish but I like the flavor of ground pork better.

Sambal Oelek can be found in the Asian aisle in most grocery stores.

It is a thick, spicy garlic chili sauce that adds a tasty kick to sauces!

Cook the pork until no longer pink, drain, then add

1 cup of reserved cooking liquid from the noodles.

You can find Japanese Somen noodles in the oriental section of most

supermarkets or in an oriental grocery store.

Cook the noodles then immediately drain and cool down with ice cubes.

To make the sauce: mix together rice wine vinegar, sugar, and soy sauce.

I usually do 1/2 cup rice wine vinegar, 2 tbsp sugar, and 1 tbsp soy sauce

but you can adjust to your taste.

This is Japanese radish or pickle. I buy mine at the commissary but you can also find at Oriental grocery stores. Has a nice crunch and delicious pickled flavor that’s great in noodles and sushi!

I saw a version of this recipe a while back on Diners, Drive Ins, and Dives on Food Network. I thought it sounded like an interesting combination but quickly forgot about it. Then the other night I was searching through my refrigerator and pantry, trying to put together a quick meal for my husband and I and after finding a head of cabbage and a Cajun pork steak in my empty fridge (pretty much all we had in the fridge when we got back from Christmas vacation besides some condiments!) along with some egg noodles and an onion in my pantry, I decided why not give cabbage and noodles a try!
….Ya know what? It was dang good!

I like using No Yolks Egg Noodles for this recipe.
While the cabbage is cooking bring a pot of salted water to boil and cook egg noodles according to package.

Drain noodles and mix into the cabbage mixture along with remaining 2 tbsp of butter.
Add pork and toss to combine and heat through.
Serve warm.
