Both times I have ordered their fantastic <b>Spinach Salad</b>, which is tossed in a delicious <b>Hot Bacon Mustard Vinaigrette. </b>The dressing alone is enough for me to eat every bite {and lick the plate!} but then they top it with tart apples, crunchy onions, fresh tomato, soft goat cheese, candied walnuts, and finally a perfectly poached egg. <div class="separator" style="clear: both; text-align: center;">Today I am sharing the restaurant&#8217;s popular&nbsp;<b>Spinach Salad with Hot Bacon Mustard Vinaigrette</b> recipe. I remade their recipe at home and I am proud to say it turned out great! This beautiful dish came out almost identical to the dish I received at the restaurant! When dining at <b>Pot Roast and Pinot</b>, we ordered this salad to share as a second course but at home I made this as our meal. Although Ashton and I are both proud members of the Clean Plate Club, this was a hearty plateful for each of us but in the end we pulled through and ate every bite {and didn&#8217;t eat again for 24 hrs!}.</div>

I came across this recipe originally when I was reviewing the<a href="https://www.4theloveoffoodblog.com/2013/11/skinny-pumpkin-soup-with-cinnamon-sugar.html"> Gooseberry Patch Hometown Harvest</a> cookbook. I made it for a brunch party and it was a hit, especially (surprisingly) with the toddlers! I made a few changes and additions and this final recipe for <b>Game Day Spinach Snackers</b> scored a touchdown in my house!</div>

<div style="text-align: center;"><b><i>Makes 2 &#8211; 3 dozen balls </i></b></div>
<ul style="text-align: center;">
<li>&nbsp;1 10oz package frozen chopped spinach, thawed and drained</li>
<li>1/2 small yellow onion, diced</li>
<li>1 clove garlic, pressed/grated</li>
<li>1/4 cup butter, melted and slightly cooled</li>
<li>1/2 cup mixed Italian cheese, shredded</li>
<li>1 cup dry boxed stuffing mix</li>
<li>3 eggs, beaten&nbsp;</li>
</ul>
<h3 style="text-align: center;">Directions:</h3>
<ol style="text-align: center;">
<li>&nbsp;Preheat oven to 350 degrees.</li>
<li>Line 2 baking sheet with parchment paper or Silpat liner.</li>
<li>In a large bowl, whisk together eggs, butter, and cheese.</li>
<li>&nbsp;Add onions, garlic, spinach, and stuffing and mix well.</li>
<li>Roll into small walnut sized balls and line on the baking sheet.</li>
<li>Bake for 20 min until crispy and lightly golden.</li>

<li>&nbsp;4 cups baby spinach leaves</li>
<li>2 cups thinly sliced mushrooms (white or baby bella)</li>
<li>1/4 cup chopped cooked bacon</li>
<li>1/2 cup thinly sliced red onion</li>
<li>1/2 cup diced tomato</li>
<li>Raspberry Vinaigrette (recipe below)</li>
</ul>
<h3 style="text-align: center;">Directions:</h3>
<ol style="text-align: center;">
<li>Mound equal amounts of the spinach on two salad plates.</li>
<li>Sprinkle with mushrooms and bacon.</li>
<li>Arrange the onion over the top.</li>
<li>Sprinkle the tomato around the edge of the salad.</li>
<li>Drizzle with the desired amount of Raspberry Vinaigrette.</li>

<h3 class="separator" style="clear: both; text-align: center;">Raspberry Walnut Vinaigrette Ingredients:</h3>
<ul style="text-align: center;">
<li>1 cup raspberry jam</li>
<li>1/4 cup cold water</li>
<li>1 tablespoon apple cider vinegar</li>
<li>1 teaspoon walnut oil</li>
<li>salt/pepper, to taste</li>
<li>1/4 cup canola oil</li>
</ul>
<h3 style="text-align: center;">Directions:</h3>
<ol style="text-align: center;">
<li>Combine the jam, water, vinegar, walnut oil, salt and pepper in a bowl and mix well.</li>
<li>Add the canola oil slowly, whisking constantly until blended.&nbsp;</li>
<li>Store the vinaigrette in a jar with a tight-fitting lid in the refrigerator for up to 3 weeks.</li>
