<p>It&#8217;s Wok Wednesday and we are stirring up our routine this week! Living in a little military town, we don&#8217;t get restaurant quality Asian food often. But with &nbsp;<b>P.F. Chang’s Home Menu</b> frozen meals and appetizers we can have a quick, stress-free meal with authentic, made-from-scratch sauces and vibrant veggies. Recipes are inspired by the P.F. Chang’s Bistro and co-developed with restaurant co-founder Philip Chiang.<br />

The entire skillet meal is ready in less than 15 minutes and that makes for one happy Mama, especially on a busy weeknight! Tonight since I had some extra time, I decided to make another restaurant inspired dish: <b>Cream Cheese Crab Wontons</b> to go with our Orange Chicken for dinner.</p>

<div style="text-align: center;">I first came across a version of this recipe in my May <a href="http://www.happymommybox.com/">Happy Mommy Box</a>.<br />
The blog, <a href="http://www.pinchofyum.com/">Pinch of Yum </a>featured her recipe for <b>Homemade Ramen </b>in the booklet included in the box. I made it for family dinner, tweaking the recipe slightly and loved how it turned out! I have since made it a couple more times, adding my favorite <b>Miso Ginger Broth</b> from Trader Joe&#8217;s and sliced Japanese fish cake and pickled radish on top. The vegetables you add are up to you but I love the crunchy kale and shredded carrots. I used dried lobster mushrooms once (rehydrated in the simmering broth) and sliced shiitake mushrooms the other times. Both were delicious! The addition of whisked egg is something I have always added to ramen noodles (back in my poor college days they were a staple of my diet) and I love the texture and taste it adds to the soup. This hearty meal is perfect for Meatless Monday or any day you want a veggie packed flavorful meal!</div>

I was lucky enough to be chosen to try the new <b>Campbell&#8217;s Skillet and Slow Cooker Sauces </b>this month. They sent me a coupon to try one of each. I do like to create my own sauces, since I have found most packaged brands to be bland and unoriginal, but I decided to check out what Campbell&#8217;s had to offer. I was pleasantly surprised when I found these sauces on the shelf at my local grocery store. Talk about inspired flavors: Apple Bourbon Barbecue, Sweet Korean BBQ, and my favorite <b>Thai Curry</b>! I was excited to get home and try it out because seriously it doesn&#8217;t get any easier than cook your meat, add the sauce and veggies, and you&#8217;re done!&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">This isn&#8217;t some simple lackluster sauce either, y&#8217;all! The <b>Thai Curry</b> flavor is seasoned with lemongrass and basil and blended with coconut milk, cilantro, and jalapenos. The package recommends adding chicken but I decided to try shrimp and some fresh sliced veggies. The added touch of toasted coconut and jasmine rice was inspired by my favorite dish at <i>The Cheesecake Factory, Bang Bang Chicken and Shrimp</i>!</div>

<li>12-16oz large or extra large shrimp, peeled</li>
<li>1/2 yellow onion, sliced</li>
<li>1/2 red bell pepper, sliced</li>
<li>1 cup peas</li>
<li>1 cup baby carrot peels (see pic below)</li>
<li>1/4 cup green onions, chopped</li>
<li>2 cups Jasmine rice, cooked</li>
<li>9oz pkg Campbell&#8217;s Skillet Sauce in Thai Curry flavor</li>
<li>1/2 cup shredded coconut, toasted</li>
<li>1 tbsp oil, for saute</li>
</ul>
<h3 class="separator" style="clear: both; text-align: center;">Directions:</h3>
<ol style="text-align: center;">
<li>&nbsp;Add oil to a skillet over medium and add shrimp. (I used olive oil, canola/vegetable would work too).</li>
<li>Cook, tossing until pink and cooked through, just a few minutes.</li>
<li>Add Thai Curry Sauce, onions, peppers, carrots, and peas. Stir to combine. Turn down heat to low, cover, and simmer for 10 minutes.</li>
<li>Meanwhile, in a small dry skillet toast shredded coconut until golden. Reserve in a bowl for topping.&nbsp;</li>
<li>To plate: Add a heaping serving of the shrimp and curry sauce and top with a few scoops of rice. Sprinkle a good amount of toasted coconut over everything and then add some green onions to garnish.</li>

That way you get the color and flavor but don&#8217;t have to spend the time cooking a crunchy carrot.</div>

<p><em><strong>Happy Meatless Monday! </strong></em></p>
<p>I was craving a <b>stir fry</b> the other night so I threw this together with the ingredients I had in the fridge. This was the first time I have ever made a <b>stir fry</b> without meat and I was pleasantly surprised at how delicious and filling it was! This was also the first time I made <b>crispy tofu</b>.<br />
I have had it and loved it at restaurants but I finally attempted it at home and it came out perfect!&nbsp;<br />

<div id="recipe-38480-instructions" class="wprm-recipe-instructions-container wprm-recipe-38480-instructions-container wprm-block-text-normal" data-recipe="38480"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><ul class="wprm-recipe-instructions"><li id="wprm-recipe-38480-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat a non stick skillet over medium and add 1 tbsp canola oil.</div></li><li id="wprm-recipe-38480-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Press tofu with a few paper towels to make sure you have removed as much liquid as possible then add cubed tofu to the skillet.</div></li><li id="wprm-recipe-38480-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Brown on each side, approx 5 minutes each, then remove to a paper towel lined plate to drain.</div></li><li id="wprm-recipe-38480-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Using the same skillet over medium add 1 tbsp sesame oil and add all chopped veggies (except corn and green onions). Sauté until softened but still crisp, about 5-7 minutes.</div></li><li id="wprm-recipe-38480-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add garlic, ginger, and corn and cook for another 30 seconds. Mix well, adding more oil if necessary.</div></li><li id="wprm-recipe-38480-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Finally add teriyaki sauce, tofu, and cooked noodles (if they are stuck together mix with reserved pasta water to loosen, then drain, and add to skillet), tossing to coat and warm.</div></li><li id="wprm-recipe-38480-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove from heat, garnish with green onions, and serve.</div></li></ul></div></div>

Saute until softened but still crisp, about 5-7 minutes. Add garlic, ginger, and baby corn (you can add more oil if needed) and cook for another 30 seconds. Then add crispy tofu, noodles, and Teriyaki sauce to coat. Mix well. Remove from heat, garnish with diced green onions, and serve hot.</div>

We tend to use it as a marinade or dipping sauce but I thought I would toss it with the noodles in this stir fry and it was perfect! Not too thick and heavy with a sweet tangy flavor.</div>

<li>8-12 oz pkg thin Chinese Egg Noodles</li>
<li>16 oz ground pork</li>
<li>2 tablespoons<br />
canola oil</li>
<li>1/3 cup<br />
dry-roasted peanuts</li>
<li>3 tablespoons<br />
low-sodium soy sauce</li>
<li>1 1/2 tablespoons<br />
sambal oelek (ground fresh chile paste)</li>
<li class="hasDeal cboxElement">1 teaspoon<br />
sugar&nbsp;</li>
<li>2<br />
garlic cloves</li>
<li>1 teaspoon ground ginger</li>
<li>3 tablespoons lime juice</li>
<li class="hasDeal cboxElement">1/2 cup sliced green onions&nbsp;</li>
<li class="hasDeal cboxElement">3/4 cup<br />
chopped seeded peeled English cucumber (about 1/2 a cucumber)</li>
<li class="hasDeal cboxElement">1/4 cup<br />
chopped fresh cilantro&nbsp;</li>
<li class="hasDeal cboxElement">1/2 cup bean sprouts (optional)</li>
<li class="hasDeal cboxElement">salt, to taste</li>
<li class="hasDeal cboxElement">cooking spray</li>
</ul>
<h3 style="text-align: center;">Directions:</h3>
<ol style="text-align: center;">
<li>Cook noodles in boiling water for 3 minutes.&nbsp;</li>
<li>Drain<br />
in a colander over a bowl, reserving 1 cup cooking liquid. Place<br />
noodles in a large bowl.</li>
<li>Heat oil in a large nonstick skillet over medium-high heat. Add<br />
peanuts to pan; sauté 2 minutes or until fragrant. Remove from heat;<br />
cool slightly.&nbsp;</li>
<li>Combine peanut mixture, soy sauce, sambal oelek, sugar, garlic, and ginger in a mini chopper; process until finely ground.</li>
<li>Cook pork in skillet over medium heat<br />
until no longer pink, stirring to crumble. Drain off excess grease.</li>
<li>Add peanut mixture and 1 cup cooking<br />
liquid to pork; bring to a boil. Season with salt and cook 1 minute, stirring frequently.&nbsp;</li>
<li>Add<br />
pork mixture, juice, and onions to noodles; toss well.&nbsp;</li>
<li>Top each serving with chopped cucumber, cilantro, and bean sprouts.</li>
</ol>

<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Add garlic and shallot and cook for one minute then add coconut<br />
milk, fish sauce, lime juice, sugar, lemongrass paste&nbsp;and 2 cups water.&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Bring to a boil, then reduce to a simmer and cook for 10-15 minutes.</span><span style="color: black; font-family: 'arial'; font-size: 10.0pt;">&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Heat a skillet over med-high with 1 cup water.&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Bring to a simmer<br />
and add mussels, cover and cook until they open-about 8-10 minutes. Discard<br />
unopened mussels.&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Remove mussels to a bowl, dump water and add 2 tbsp oil to<br />
skillet. Add shrimp and scallops and cook for a few minutes until cooked<br />
through. Remove to bowl with mussels.</span><span style="color: black; font-family: 'arial'; font-size: 10.0pt;">&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Heat a small skillet, spray with cooking spray.&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Beat 2 eggs in a<br />
bowl with soy sauce and pour into warm pan.&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Tilt pan to cook evenly and slide<br />
omelette onto plate when cooked through on both sides. Cool slightly and chop<br />
into bite size pieces.</span><span style="color: black; font-family: 'arial'; font-size: 10.0pt;">&nbsp;</span></li>
<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Bring a saucepan of water to a boil for noodles. Add salt and boil<br />

<li><span style="color: black; font-family: 'arial'; font-size: 10pt;">Add seafood on top of noodles in bowls, then the coconut broth.<br />

It&#8217;s one of those dishes that is super simple to make and tastes great, is cold and refreshing for summer time and fills you up! Hope you enjoy this recipe as much as my family does. <li class="ingredient-item ingredient"><span class="amount"> 1/2 </span> <span class="name">avocado, cut into matchsticks</span></li>

<li class="ingredient-item ingredient"><span class="amount">3 ounces</span> <span class="name">imitation crab sticks</span></li>

<h3 class="bar-header directions" style="text-align: center;">Directions</h3>
<ol class="recipe-directions" style="text-align: center;">
<li class="recipe-steps">Mix rice and water and bring to a boil.</li>
<li class="recipe-steps">Cover and turn down and let simmer for 10 minutes.</li>
<li class="recipe-steps">Take off heat and let sit for 15 minutes.</li>
<li class="recipe-steps">While rice is cooling, whisk eggs and 2 tbs water in a bowl.</li>
<li class="recipe-steps">Coat a small crepe pan with cooking spray and heat over med-low heat.</li>
<li class="recipe-steps">Pour enough egg mixture to lightly coat the pan (you should be able to make 5-6 thin omelettes total)</li>
<li class="recipe-steps">Let the omelette cook for approx 1-1 1/2 minutes, tilting pan to allow uncooked eggs to spread and cook evenly.</li>
<li class="recipe-steps">Slide omelette onto plate and cook remaining omelettes.</li>
<li class="recipe-steps">After the rice is cooled transfer to a bowl and mix in sugar and rice vinegar (you may add salt to taste if you like).</li>
<li class="recipe-steps">Chop rice (do not mix) with a wooden spatula or spoon until the seasoning is mixed in and the rice is glossy and sticky.</li>
<li class="recipe-steps">Next, mix the wasabi paste with the cream cheese in a small bowl.</li>
<li class="recipe-steps">To roll the Sushi Omelettes: place one omelette onto a sushi mat (or you can use wax paper).</li>
<li class="recipe-steps">Spread a light coating of cream cheese mixture onto omelette.</li>
<li class="recipe-steps">Then spread a few tbs of sushi rice on top.</li>
<li class="recipe-steps">Next add cucumber, avocado, and crab.</li>
<li class="recipe-steps">Roll the omelette up firmly with the mat or paper.</li>
<li class="recipe-steps">Wet a sharp knife and cut the omelette roll into small bite size sushi rolls.</li>
<li class="recipe-steps">These are tasty alone or can be served with soy sauce.</li>
