Gouda Queso Fundido Dip with Chorizo

Happy Superbowl Sunday! 

I could not think of a better game day appetizer dip that a skillet full of sizzling gooey cheese! The people over at Houseparty and Aria Dofino sent me a box full of their delicious cheese to try {including my favorite- Gouda}, so I created this Queso Fundido (Spanish for melted cheese) dip. You simply cook and melt everything in the same cast iron skillet then layer cheese with sausage then cheese and peppers and onions and then..you guessed it..more cheese! Then bake until melted and serve hot out of the oven with chips to dip. 
I used shredded Chipotle Gouda and Chili Lime Gouda both by Aria Dofino for this recipe along with spicy crumbled chorizo sausage. It was spicy but not overly hot. Add chopped jalapenos for a little more heat! Serve with tortilla chips as dippers and enjoy this game day dip!

Gouda Queso Fundido Dip with Chorizo

Ingredients

  • 10-12 oz pkg Chorizo casing removed and crumbled
  • 1 large yellow onion diced
  • 1 large red bell pepper seeded and diced
  • 16 oz Gouda Cheese Grated (I used Chipotle and Chili Lime flavor)
  • 1 jalapeno diced (optional)
  • 1 tsp chili powder
  • 1 avocado diced for garnish
  • 2 oz can sliced black olives for garnish
  • 1/4 cup cilantro diced for garnish (optional)
  • Tortilla Chips for serving

Instructions

  • Preheat oven to 400 degrees.
  • In a large cast iron skillet, cook and crumble the sausage until brown.
  • Remove from skillet and drain on a paper towel. Pour off any excess grease.
  • Add onions and bell pepper to the skillet and cook over medium heat until soft and golden brown. Remove from skillet
  • and set aside.
  • To build the skillet, place 1/3 of the cheese in the cast iron skillet. Add half the sausage. Add another third of the cheese, then as
  • much of the veggie mixture as you'd like. Add almost all of the remaining cheese (reserve about 1/2 cup), the rest of the sausage, then whatever cheese you have left. Sprinkle the top very lightly with chili powder.
  • Place into the oven bake for about 5-7 minutes. You want to bake it until the cheese is totally melted, hot, and slightly bubbling...but before the cheese starts to firm up and harden.
  • Remove from the oven, top with veggies to garnish and serve immediately with tortilla chips!

I love spicy pork chorizo sausage and it is perfect for this Queso Fundido.
Remove from the casing, crumble, and cook until brown. 
Drain on a papertowel lined plate.

Drain excess grease from skillet then add diced onions and peppers.
Cook until softened and remove from skillet.
Shred the cheese into a large bowl.
Time to build the Queso!
Start with a layer of half the cheese in the bottom of the skillet.
Top with half of the crumbled Chorizo.
Add most of the remaining cheese (reserve about 1/2 cup).
Now top with cooked diced onions and peppers.
Add remaining sausage then the rest of the shredded cheese.
Sprinkle on chili powder. 
Place in the oven for about 5 minutes until cheese is melted and gooey.
You want the cheese to be melted and bubbly.
This dip is best served piping hot.
Immediately top with veggies to garnish and serve with chips to dip.
 
 Carefully take the skillet right to the table 
so everyone can dip and enjoy the melted goodness that is Queso Fundido!
How can you pass up this appetizer?! It’s a game day winner in my book!

    I followed recipe directions perfectly. The cheese never really melted but went right to a rubbery consistency. What brand of cheese do you use?

      Hi,
      I used Aria brand cheese that was sent to me (see top of the post) . I think using good quality block cheese that you shred yourself is key to a good melted dip. Hope this helps!
