Today we are making Coconut Granita .
This refreshing Italian dessert will help you beat the heat this summer! 
My easy version has just 3 ingredients, including Torani Coconut syrup, and is a fruity slushy treat.

Ingredients:

Serves 4-6
  • 1 quart {4 cups} water
  • 3/4 cup sugar
  • 2/3 cup Torani coconut syrup {I used sugar free}
  • 1/4 cup toasted, shredded coconut, for garnish {optional}

Directions:

  • In a medium saucepan, stir together sugar and water.
  •  Bring to a boil over medium-high heat, stirring occasionally until sugar has completely dissolved.
  •  Once mixture has come to a boil, remove from heat and let cool completely.
  • Stir in coconut syrup.
  • Pour mixture into a 13×9-inch baking dish or similar shallow pan.
  •   Cover with plastic wrap and freeze approximately for an hour.
  • Remove from freezer and using a fork, scrape and stir to break up ice crystals. 
  • Cover again and return granita to freezer for at least another 2-3 hours until firm {up to overnight}.
  • Remove from freezer and scrape and stir with a fork again, until it is the texture of fine snow.
  • To serve, spoon granita into chilled glasses or bowls.
  • Garnish with a sprinkle of toasted coconut.
  • Serve immediately.
All you need are three ingredients to make this icy treat! 
How fun are these Joyjolt martini glasses?! 
I chilled them and served my granita in them for a fancy dessert!

Stir in coconut syrup.
