4 Ingredient Banana Breakfast Cookies

If you are like me you are cleaning out your pantry and may be low on some of your staples like milk, eggs, and butter. 

So I created this tasty cookies for my family using only four pantry, shelf stable ingredients. Scroll down for the easy recipe and enjoy these soft and delicious Banana Breakfast Cookies.

Banana Breakfast Cookies

Ingredients

  • 2 ripe bananas peeled
  • 1/4 cup peanut butter
  • 1 cup quick oats
  • 1/3 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, mash the bananas with a fork.
  • Add the peanut butter, oatmeal, and chocolate chips to the bowl and mix well.
  • Scoop balls of dough and place in rows on a lined baking sheet.
  • Bake for 15 minutes.
  • Remove from the oven and cool slightly before removing to a rack. I like to serve slightly warm.
  • Store in a closed container in the fridge for up to 3 days.

All you need for these yummy cookies is just four ingredients: ripe bananas, peanut butter {creamy or crunchy}, chocolate chips, and oats. 

Peel two very ripe {they will be extra sweet} bananas and mash with a fork.

Add all four ingredients to a mixing bowl.

Cookie baking is her favorite!

Stella made her own cookies too! This is a fun hands on recipe to make together. 

Scoop balls of dough and place in rows on a lined baking sheet.

I like to use an ice cream scoop because the dough is sticky. 

We also made our cookies with applesauce instead of bananas.

Bake at 350 degrees for 15 minutes and serve warm.

Soft and delicious. I like to serve slightly warm. Store in a container in the fridge and enjoy!
