Brown Sugar Heart Meatloaf and Heart Shaped Valentine’s Dinner

Every year for Valentine’s Day I create a heart shaped meal for my little sweethearts to enjoy.
We have made pizza, quiche, fondue, and this year we made heart shaped Brown Sugar Meatloaf .
I have multiple size heart dishes so I used my heart baking dish to make a 2-3 serving meatloaf and then made two individual meatloaves in my heart ramekins. The girls loved it!
To add to our festive meal, I shaped our mashed potatoes using a cookie cutter and served finger foods and dip as an appetizer in cute little heart shapes.
 Simple yet so fun for the little ones {and grownups too}! 
There are so many foods that can be cut {by hand or using a cookie cutter or mold} into hearts.
 I like carrots, cucumbers, baby tomatoes, cheese, pepperoni, and strawberries.

Brown Sugar Heart Meatloaf

Makes 4-6 servings

Ingredients

  • 1 lb ground pork
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1/2 yellow onion grated
  • 2 cloves garlic minced
  • 1/2 cup cheddar cheese shredded {optional}
  • For the brown sugar glaze:
  • 1/4 cup ketchup
  • 2 tbsp brown sugar

Instructions

  • Preheat oven to 375 degrees.
  • In a small bowl add ketchup and brown sugar. Stir well and set aside.
  • In a large bowl add ground pork, egg, breadcrumbs, seasoning, grated onion, and garlic.
  • Mix together by hand.
  • Spread a few spoonfuls of brown sugar glaze on the bottom of your baking dish.
  • Add half of your meatloaf mixture.
  • Add your shredded cheese to the middle then top with the remaining meatloaf, pressing to cover the cheese.
  • Spread on the remaining glaze.
  • Bake for 30 minutes or until cooked through and no longer pink.
  • Gently remove from dish, slice, and serve with mashed potatoes and veggies.

I have tried many different meats in my meatloaf
 but I always come back to my favorite- ground pork!

In a large bowl add ground pork, egg, breadcrumbs, seasoning, grated onion,
and garlic. Mix together by hand.

In a small bowl add ketchup and brown sugar. Stir well and set aside.

Spread a few spoonfuls of brown sugar glaze on the bottom of your baking dish.

Add half of your meatloaf mixture.

Add your shredded cheese to the middle then top with the remaining meatloaf,
pressing to cover the cheese.

You can also use heart shaped ramekins for individual meatloaves, ideal for the kiddos.

This recipe made about 4-6 servings depending on how much your kids eat!

Spread on the remaining glaze.
Bake for 30 minutes at 375 degrees until cooked through and no longer pink. 
Gently remove from dish, slice, and serve.
I shaped mashed potatoes too and served them with the meatloaf. 

Dinner’s ready and it’s almost too cute to eat!

Valentine’s Day is one of my favorite holidays and my foodie family and I always have a great time cooking and eating our festive meals together!

    Still single this Valentines so didn't really celebrate. Loved seeing the different dishes being prepared. This one is definitely unique

    Oh this would have been so fun to make for my hubby, he is a meat and potatoes type of guy <3 I especially love the glaze, sometimes meatloaf can come out dry so that would really help!
