This easy summer recipe is inspired by my favorite Bananas Foster dessert.

Simply brush fresh pineapple with a brown sugar mixture and caramelize in the air fryer. Serve with ice cream for a tasty tropical treat!

Start by cutting the outside rind/peel off the pineapple then slice into approx 8 slices.

Remove the center core to make rings. You can use a pineapple corer, knife, or cookie cutter.

Mix brown sugar and cinnamon together in a small bowl.

Melt 2-3 tbsp unsalted butter. You don’t need much but if you want extra to drizzle I do 3 tbsp.

Preparing in batches, brush melted butter on 3-4 pineapple slices.

Sprinkle on brown sugar mixture. Flip over and add to the other side.

Add the prepared pineapple to the air fryer and cook at 400 degrees for 5 minutes.  Flip and cook for an additional 5 minutes.

Repeat with remaining pineapple.

Serve warm in a bowl with a scoop of ice cream on the side.

Add any remaining brown sugar butter sauce “drippings” from the air fryer as a drizzle on top.

I love the way you used the drippings for the ice cream.

I’m betting that brown sugar syrup would be great in iced coffee too!

Okay, so the first I thought was pineapple! YES! The second thing that came to my mind was I can make this today because it uses the air fryer and my oven element died last night. Dessert today is now a plan!
