Baked Bean Casserole with Apples and Bacon

Y’all know I love a good casserole and I especially like to bake up side dishes like this casserole for potlucks and holiday meals. One of my cooking heroes, Ms Paula Deen, has got some delicious Southern casserole recipes in her cookbooks! This easy Baked Bean Casserole is inspired by one of Paula’s recipes. I switched up a few things, like partially cooking the bacon before adding it so it gets nice and crispy and removing the extra salt. 
This is a sweet and savory Southern side dish every one will enjoy!

Baked Bean Casserole with Apples and Bacon

Ingredients

  • 5 strips bacon partial cooked*
  • 1 cup sweet yellow onion diced
  • 2 20 oz cans baked beans {I prefer brown sugar and bacon}
  • 1 Granny Smith apple diced
  • 1 tablespoon yellow mustard
  • 1/4 cup brown sugar

Instructions

  • Preheat the oven to 350 degrees.
  • Coat a 9X13 baking dish with nonstick cooking spray.
  • In a large bowl, combine all the ingredients except bacon and mix well.
  • Pour into a baking dish and lay bacon on top.
  • Cover and bake for approximately 45 minutes or until thick and bubbly.
  • Uncover and bake for 5 more minutes to crisp up bacon.

*I pre-baked my bacon on a rack on top of a lined baking sheet. 400 degrees for 10 minutes.

Sweet yellow onion and tart Granny Smith apples add another 
layer of flavor to this creamy casserole. 
You can use any brand and style of canned baked beans you want.
I like sweet beans with brown sugar and {you guessed it} bacon!
Dice up one Granny Smith apple {about 1 cup}. Leave the skin on.
 In a large bowl, combine all the ingredients except bacon.
 
Mix well.
 Pour into a greased baking dish.
 
Lay partially cooked bacon on top.
I pre-baked my bacon on a rack on top of a lined baking sheet
 at 400 degrees for 10 minutes. 
This way it gets nice and crispy on top of the beans.
Cover and bake for approximately 45 minutes or until thick and bubbly. 
Uncover and bake for 5 more minutes to crisp up bacon.
Serve with the crispy bacon strips on top or cut them up and sprinkle in.
Serve warm at your next potluck and enjoy the savory goodness of this delicious Southern casserole!
