Fresh Picked Plum Upside-Down Cake

Today I am sharing a delicious recipe I found on Pinterest using some freshly picked plums. My parent’s have a plum tree covered in ripe fruit and I was lucky enough to get a bag full of beautiful fresh plums last week from them. My Mom made a plum tart and other tasty goodies and she shared this recipe she found for Plum Upside-Down Cake with me. It sounded delish and right up my alley so we made it over the weekend. What a delicious way to use up our ripe fruit!

Ingredients:

Serves 8

  • 1 1/2 sticks butter, softened
  • 3/4 cup light brown sugar
  • 1 tablespoon honey
  • 7-8 plums, cut into segments
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon salt
  • 3/4 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup milk

Directions:

  1. Preheat oven to 350F. 
  2. Grease a 9-inch round cake pan.
  3. In a skillet melt 6 tbsp of butter with honey and brown sugar over medium heat,
    stirring until smooth sauce forms. 
  4. Pour sauce into prepared cake pan,
    arrange plum segments on top.
  5. Mix flour, baking powder, cardamom and salt in a medium bowl, set aside. 
  6. With a mixer, whip remaining butter and white sugar until creamy. 
  7. Add eggs
    and both extracts and whip until white and fluffy. 
  8. Add 1/3 flour
    mixture, mix until just blended. 
  9. Add 1/2 milk, then 1/3 flour, the rest
    of milk and flour, mixing until just combined.
  10. Pour batter over plums, bake until golden. (I baked for 35-40 minutes but test with a toothpick to see if you need to bake longer.)
  11.  Let cool in pan
    for about 15 min, run a knife around the edges and carefully invert onto
    serving platter. 
  12. Serve warm, with whipped cream or ice cream.

In a large skillet, melt together 6 tbsp butter, brown sugar, and honey.

Pour into a greased round cake pan.

Slice 7-8 fresh plums into segments.

Arrange in a circle in the cake pan.

Mix flour, baking powder, cardamom and salt in a medium bowl, set aside.

With a mixer, whip remaining butter and white sugar until creamy.
Add eggs
and both extracts and whip until white and fluffy.

Add 1/3 flour
mixture, mix until just blended.
Add 1/2 milk, then 1/3 flour, the rest
of milk and flour, mixing until just combined.

Pour batter over plums, bake until golden.
{I baked for 35-40 minutes
but test with a toothpick to see if you need to bake longer. The original recipe said bake for an hour.}

Spread to cover the plums completely.

Beautifully baked cake!
 Let cool for about 15 minutes, then run a knife around the edges
and carefully invert onto
serving platter.
 
How delicious -and beautiful- is this cake?
 
I loved this cake and plan to make it again and again!
 
The cake is slightly sweet, moist, and thick with a cardamom flavor throughout.

Top with a large scoop of vanilla ice cream and serve warm.

Try this recipe with different fruits too like peaches and nectarines.
Try this recipe when you have an abundance of freshly picked fruit!

    I'm going to make this with the plums I have left. Beautiful cake. Instructions make it look super easy.
