Springtime Haystack Egg Baskets

Happy Easter y’all!

I have a cute recipe from last Easter that I somehow {Mom brain} never got around to sharing!
The girls and I made my favorite Haystacks for dessert but made them Easter themed by adding green “grass” and robins eggs on top!
Check out this easy springtime recipe that is perfect for any making all quarantine- whoops I mean- season long!

Ingredients:

Makes about 10 haystacks

3/4 cup butterscotch chips
3/4 cup peanut butter chips
3 tbsp peanut butter
1 1/3 cups dry chow mein noodles
1/2 cup green candy melts
mini robins egg candies
10 decorative paper straws

Directions:

1. Add first 3 ingredients to a bowl.
2. Microwave on 50% power for 30 second increments, stirring in between, until melted and smooth.
3. Mix in 3/4 of the chow mein noodles.
4. Drop spoonfuls of noodles onto a parchment lined baking sheet and let harden.
5. Meanwhile add green candy melts to a bowl and melt on 50% power for 45 minutes until smooth.
6. Mix in remaining 1/4 of the chow mein noodles until coated. 
7. Spoon on top of the haystacks as the “grass” .
8. Now add a couple mini robins eggs candies on top of the grass. 
9. Bend a paper straw and press into the sides of each haystack as the basket handle.
10. Let harden completely then serve.
My Ava loves to mix and taste test my dessert recipes!
Stella likes to make a mess…and help too!
Add peanut butter chips, butterscotch chips, and peanut butter to a bowl and melt in the microwave.
Mix in 3/4 of the chow mein noodles.
Drop spoonfuls of noodles onto a parchment lined baking sheet and let harden.
Add green candy melts to a bowl and melt on 50% power for 45 minutes until smooth.
 Mix in remaining 1/4 of the chow mein noodles until coated. 
              Spoon on top of the haystacks as the “grass” .Now add a couple mini robins eggs candies on top of the grass. 
A pretty spring treat!
Now to make the baskets: bend a paper straw and press into the sides of each haystack as the basket handle.
Let harden completely then serve. 
We enjoyed these for Easter but have also made them as a springtime dessert without the basket handle and as birds nests. 
Fun to make and eat- my favorite kind of treat!
