Kentucky Derby Pie for Pi Day

It’s Pi(e) Day and y’all know I couldn’t pass sup a chance to bake up another favorite pie for dessert!
This Kentucky Derby Pie is heaven in a pie shell I kid you not!
This is inspired by my Kentucky family and my memories as a kiddo visiting them in my frilly dresses and big hats and going to the horse races. 
.The Kentucky Derby Pie is a decadent pecan and chocolate pie that is to die for! It was created at the Melrose Inn in Prospect, Kentucky and is still popular today all over the South!

Kentucky Derby Pie

Ingredients

  • 2 eggs beaten
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tbsp butter melted and cooled
  • 1 cup dark corn syrup
  • 1 tsp vanilla
  • 1 cup chopped pecans
  • 1 cup semi sweet chocolate chips
  • 1 tbsp bourbon optional
  • 1 prepared pie crust unbaked
  • ice cream. for serving

Instructions

  • Preheat oven to 350 degrees.
  • Defrost a premade pie shell or press pie dough into a 8 or 9 inch pie plate. Place on a baking sheet.
  • Mix all pie ingredients together in a bowl except pecans and chocolate. Stir well.
  • Add chopped pecans and chocolate chips and mix.
  • Pour into the pie shell.
  • Bake for 50-60 minutes until set.
  • Let cool then slice and serve with a scoop of ice cream.

Defrost a premade pie shell or press pie dough into a 8 or 9 inch pie plate. 
Place on a baking sheet.
I like to measure out all my ingredients before baking. 
Saves time and makes sure you don’t forget anything!
 Farm fresh eggs are the best. I use mine at room temp for baking. 
 I prefer semi sweet chocolate over milk.
 I also use chopped pecans instead of pecan halves because it makes the pie easier to cut. 
 I love baking with brown sugar. 
So for this recipe I added half white and half brown sugar.
 Mix all pie ingredients together in a bowl except pecans and chocolate. 
 Stir well.
 Add chopped pecans and chocolate chips and mix.
 Pour into the pie shell.
 Bake at 350 degrees for 50-60 minutes until set.

Let cool for

Slice and serve with a scoop of ice cream.

For my first #WheretoEatWednesday, I am sharing a local NWA favorite: Rein Sushi and Hibachi. Located in downtown Springdale, AR, they recently celebrated their 1 year anniversary. We dined here orignally when they first opened. It was a lunch date, and I remember loving the atmosphere and having great service, but we ordered hibachi and skipped the sushi during that visit. It was good, but I knew I needed to go back and have an adventurous sushi meal to really see what they were all about! 

Flash forward to this spring when we finally made time for a family lunch date on my husband's birthday, and I knew just where to go! When we arrived, the staff at Rein was so welcoming and kind. The small dining area has fun swinging seats and an open sushi bar. It may be small but does not feel crowded at all and is very open and bright. When we were sat, the co-owner and chef Rei came over to greet us and recommended skipping the menu and dining on a selection of his favorites and the restaurant's most popular appetizers and sushi. Let me tell you, if the chef offers to send over his dishes of choice instead of ordering off the menu, always say YES! It was all beautifully crafted, amazingly fresh, and absolutely delicious! Some of our favorites included the Crab Wonton Nachos and Monkey Brain Stuffed Avocado appetizers and the spicy Smokey Ozark Sashimi. The sushi at Rein is hands down the best I have had in the area, and I kid you not when I say every single piece I ate made me close my eyes in ecstasy! To top off our amazing meal, we shared a creamy slice of Yuzu Cheesecake, which is now my new favorite. 

So next time you are craving sushi, hibachi, and fresh seafood, check out Rein Sushi and Hibachi for lunch or dinner. They are open 6 days a week (closed on Sunday) and are truly one of the best meals you will have in NWA! Stay tuned for a gift card giveaway later today.

Ava and I attended an upcycled jewelry tree craft class for Earth Day at @bentonvillepubliclibrary tonight. We used mostly broken earrings, charms, and miscellaneous trinkets from home glued on top of twisted wire to create this unique art. I included pieces from my childhood and from my Nana.
