Mermaid Pudding Pops #SummerDessertWeek

This post and recipe was created for #SummerDessertWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

Today for #SummerDessertWeek I have a fun mermaid inspired recipe for y’all!
These colorful Mermaid Pudding Pops are a fun treat to make at home with the kids.
Get creative and decorate with sprinkles, drizzle with candy melts, and add mermaid tail picks for handles!
My kids especially like the mini pudding pops made in the ice cube tray!

These beautiful mermaid wine glasses from Susquehanna Glass inspired this recipe!

Ingredients: 

  • 2 boxes instant pudding mix {flavor/color of choice}
  • 4 cups milk
  • food coloring {if needed}
  • assorted sprinkles
  • colored candy melts, melted, for drizzle 
You will need:
Popsicle molds and/or an ice cube tray
Popsicle sticks/mini spoons/mermaid picks
Note: You can use ice cube trays and/or Popsicle molds depending on if you want large pops or mini pops.

Directions:

  1. Prepare both pudding mixes in two separate bowls by adding mix and 2 cups water and whisking for two minutes until thickened.
  2. I used strawberry cupcake flavor {pink} and white chocolate {white} and separated the prepared white pudding into two bowls. 
  3. Add 2-3 drops of desired color food coloring to each both and mix until color is throughout. I used purple and blue.
  4. Now get creative!  Add sprinkles in the bottom of some pop molds and then fill.with one or 2 colors of pudding. You can also top with sprinkles. 
  5. Add sticks or picks to the center of the pops and place in the freezer for about 2 hours. 
  6. Remove from freezer and let sit for a few minutes until you can gently remove from the molds. 
  7. You can also drizzle colored candy melted on the pops and add sprinkles on top.
  8. Serve right away or place back in the freezer until ready to eat.

After cruising down Route 66 last week we decided to make a pit stop for lunch at this one of a kind spot located on Kingsley Air Field: 🛩️ Hangar Kafe. 
We watched planes take off, pet the friendly local pups, checked out the vintage cars on display, and then went inside the cozy themed restaurant and  enjoyed a tasty home-cooked diner style meal. Highly recommend checking them out! 
Bonus: skydiving and hot air balloon rides are offered next door!
