Mini Carrot Cake Donut Bunnies

These mini baked donuts are packed full of pineapple, carrots, and warm spices then topped with powdered sugar and the cutest bunny ears!

Mini Carrot Cake Donut Bunnies

Makes: 36 Mini Donuts

Ingredients

  • 1/2 cup butter softened
  • 1 egg
  • 2/3 cup brown sugar
  • 2/3 cup vanilla yogurt
  • 1/2 cup crushed pineapple drained
  • 1 cup shredded carrot
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup powdered sugar to coat

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a mini donut pan.
  • In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
  • In a large mixing bowl, cream together softened butter and brown sugar.
  • Add egg, vanilla, and yogurt.
  • Slowly add in the bowl of dry ingredients and mix until fully combined.
  • Now, using a spatula, gently fold in the carrots and pineapple.
  • Transfer the batter to a piping {or ziploc} bag.
  • Pipe the batter into each donut cavity.
  • Bake the donuts until a toothpick inserted into a donut comes out clean, about 8 minutes.
  • Once the donuts cool add them, in batches, to a large freezer size zip top bag then add powdered sugar.
  • Shake to coat then remove to a plate.
  • Top each donut with a bunny ear pick and serve or wrap as gifts.

In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, 
cinnamon, and nutmeg.
In a large mixing bowl, cream together softened butter and brown sugar.
Add egg, vanilla, and yogurt.
Slowly add in the bowl of dry ingredients and mix until fully combined.  
Now, using a spatula, gently fold in the carrots and pineapple.
Mix well.
I purchased this mini silicone donut pan on Amazon here. 
Transfer the batter to a piping {or ziploc} bag.
 Pipe the batter into each donut cavity.
Bake at 350 degrees until the donuts until a toothpick inserted into a donut comes out clean, 
about 8 minutes.
  Once the donuts cool add them, in batches, to a large freezer size zip top bag.
Then add powdered sugar. 
Shake to coat then remove to a plate.

Top each donut with a bunny ear pick {made by Wilton and found at Walmart} 
and serve or wrap as gifts. 
I added some to bags and gave to Stella’s music class friends.

 They are not only delicious but make a cute class or family gift too.
I also make regular size carrot cake donuts for breakfast during the busy week. 
I skip the sugar on top but I bet they would be delicious with a cream cheese glaze.
