Red Velvet Hot Chocolate with Cream Cheese Whipped Cream

Happy National Hot Chocolate Day!
This double chocolate Red Velvet Hot Cocoa is perfect for upcoming Valentine’s Day!
Traditionally red velvet has buttermilk and vinegar in the ingredients however, I decided to skip those in favor of two types of chocolate along with a light and fluffy cream cheese whipped cream on top. 
 It is rich and decadent and when topped with the homemade cream cheese whipped cream, 
this recipe will surely delight your chocolate loving Valentine!

Red Velvet Hot Chocolate with Cream Cheese Whipped Cream

Makes 2 servings

Ingredients

  • 2 cups milk
  • 2 tbsp unsweetened cocoa powder
  • 1/2 cup semi sweet chocolate chips
  • 2 tsp red food coloring
  • 1 tsp vanilla
  • For the whipped cream:
  • 4 oz cream cheese softened and cubed
  • 1/2 cup powdered sugar
  • 1 cup heavy cream
  • 1/2 tsp vanilla

Instructions

  • Heat the milk over medium heat in a heavy bottom saucepan.
  • Whisk in cocoa powder and chocolate chips and stir until melted and smooth.
  • Remove from heat and add vanilla.
  • Now add the red food coloring until you get to your desired color. I added 2 tsp until I got a dark red.
  • Pour into two mugs and top with cream cheese whipped cream.
  • Serve hot.

For the whipped cream:

  • Place your bowl and mixer attachment in the freezer for 10 minutes.
  • Remove from freezer and add cubed cream cheese and powdered sugar to the mixer bowl of a stand mixer.
  • Mix on medium heat until creamed and fluffy, about 2-3 minutes.
  • Add cold heavy cream and vanilla and continue to mix until stiff peaks form.
  • Store in a covered container in the refrigerator until ready to top your hot chocolate.

For the whipped cream:
Add cubed cream cheese and powdered sugar to a cold mixer bowl of a stand mixer. 
Mix on medium heat until creamed and fluffy, about 2-3 minutes.
Add cold heavy cream and vanilla and continue to mix until stiff peaks form.
Store in a covered container in the refrigerator until ready to top your hot chocolate.
When ready to top your mugs of hot cocoa, add the whipped cream to a pastry bag or 
For the hot chocolate: heat the milk over medium heat in a heavy bottom saucepan.
Whisk in 2 tbsp cocoa powder.
Then add chocolate chips.
Stir until melted and smooth.
Remove from heat and add vanilla.
Now add the red food coloring until you get to your desired color.
 I added 2 tsp until I got a dark red.
Whisk the color in well.
I pour my finished hot chocolate into a large measuring cup 
so it is easy to pour into mugs.
Pour into two mugs.
Top with a swirl of cream cheese whipped cream. 
I added a red heart marshmallow to mine too!
