Texas Sweet Tea Pie #SummerDessertWeek

This post and recipe was created for #SummerDessertWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

This sweet and tart chess pie is flavored with brewed tea, fresh lemon, and lots of Dixie Crystals sugar! Top with homemade whipped cream and you have a delicious Texas inspired summer dessert!

Texas Sweet Tea Pie

Makes one 9 inch pie

Ingredients

  • 1 frozen pie crust thawed
  • 1 cup {2 sticks}unsalted butter softened
  • 2 cups Dixie Crystals sugar
  • 1 3/4 cups flour
  • 3 egg yolks
  • 1 cup brewed tea cooled
  • 1 teaspoon lemon zest
  • juice from 1/2 a lemon
  • 2 1/2 teaspoons cornmeal
  • 1/2 teaspoon salt
  • whipped cream for topping

Instructions

  • Preheat oven to 350 degrees.
  • Roll out pie crust and press into a 9 inch pie plate.
  • Crimp edges with a fork and chill until ready to bake.
  • Add butter and sugar to a large mixing bowl and beat until fluffy.
  • Add yolks one at a time and mix on low.
  • Now add cooled tea, lemon zest and lemon juice and mix well.
  • Stir in flour, salt and cornmeal until it's all combined.
  • Pour into pie crust and place on a baking sheet.
  • Bake 45-55 minutes or until crust is golden and pie is set.
  • You can chill until ready to serve or let sit for at least 10 minutes at room temp.
  • Slice and top with whipped cream.

 Add two tea bags to 4 cups boiling water then remove from heat and let them steep for 5 minutes.
You will need 1 cup cooled tea for this pie. Use the rest to make a tall glass of iced tea!
You will need 2 heaping cups of Dixie Crystals/Imperial Sugar for this recipe.
 You can never have too much sugar in sweet tea, right?!

 Sometimes I make my own crust but in a pinch I use these frozen dough pucks.
They are from a local Texas bakery and sold at our grocery stores here in Texas.


 Roll our thawed dough then press into a 9 inch pie plate.
Crimp edges with a fork.


 Add butter and sugar to a large mixing bowl and beat until fluffy.
Add yolks one at a time and mix on low.

 Now add fresh lemon zest and lemon juice.

And pour in 1 cup of cooled tea. Mix well.

Now add the dry ingredients starting with 2 1/2 tsp of cornmeal.
This keeps the pie from being too runny.

 Add flour and salt and stir until combined.

  Pour into pie crust and place on a baking sheet.

Bake for 45-55 min at 350 degrees.

You can chill until ready to serve or let sit for at least 10 minutes at room temp.

 Slice and top with whipped cream then serve.
