Low Fat 2 Ingredient Pumpkin Brownies

Happy 1st Day of Fall!
You know what this means, right? 
Pumpkin overload {and I love it}!
The cool weather hasn't made it here in Louisiana yet, but I am so ready for cooler temps, pumpkin patches, hay rides, hot chocolate, cute boots and lots of fall pumpkin recipes!
I thought I would start off the season with this easy Pumpkin Brownie recipe. It is only 2 ingredients: boxed brownie or cake mix and a can of pumpkin puree! So by skipping the oil, butter, eggs, etc and just using pumpkin, you are cutting the fat and calories and the brownies still taste 
Ah-mazing and are decadently moist and gooey!

Ingredients: 

  • 14oz can pumpkin puree
  • Box of chocolate cake or brownie mix {I used Devil's Food}

Directions:

  1. In a large bowl, mix together cake mix and pumpkin until smooth.
  2. Pour into a greased 8X8 baking dish.
  3. Bake according to box directions {I baked at 400 degrees for 16-18 minutes}.
  4. Let cool slightly then cut into squares and serve.

  1. I tried this with a brownie mix, but got a horrible, rubbery texture! Did you ever have success with a brownie mix? If so, what one?

  2. You baked it too long is my bet. I've tried it with many different types of brownie mix and have loved it. I also like to add a tsp or so baking powder just and some chocolate chips.

  3. Do these not need a sweetener, does the box mis contain some? Curious because normally pumpkin recipes need a sweetener because it's so bland on it's own. XD

    1. No sweetener needed. The cake mix includes it.
