Meatless Monday: Pimento Cheese Stuffed Jalapeno Grilled Cheese Sandwich

 Meatless Monday is starting to be my favorite day of the week! OK, so originally I started doing it to add more veggies into our diet and I know this recipe is necessarily healthy but who doesn’t love grilled cheese?! And if you are a fan of spicy food like my husband and I you will love this Pimento Cheese Stuffed Jalapeno Grilled Cheese Sandwich! Whew that’s a mouthful! But seriously make this now. It’s ah-mazing!

 

 Ingredients:

Makes two sandwiches
  • 2 large Jalapenos
  • 1 1/2 tbsp mayo
  • 1/4 cup shredded Cheddar
  • 1 tsp hot sauce
  • 2 tsp pimentos, chopped and drained
  • 4 thick slices of Jalapeno Cheese bread or bread of your choice
  • 4 slices of Muenster cheese
  • 2-4 tbsp butter
  • non stick spray, optional

Directions:

  1.  Preheat oven to 325 degrees.
  2. Mix mayo, shredded Cheddar, hot sauce, and pimentos in a bowl. Set aside.
  3. Slice jalapenos length wise and core and remove stem and seeds.
  4. Fill cored jalapenos with the pimento cheese spread. 
  5. Place filled jalapenos on a baking sheet and bake for 10 minutes, until melted and bubbly.
  6. Meanwhile butter both sides of each bread slice.
  7. Spray or butter a grill pan or heavy skillet and lay bread in the pan, heat over medium heat.
  8. Flip over after it has toasted and browned, usually a minute or two.
  9. Lay a slice of Muenster cheese on each slice of bread and toast the other side for a minute or two, adding more butter or non stick spray to the pan if necessary.
  10. Remove the jalapenos from the oven and let cool slightly.
  11. Slice jalapenos in half.
  12. Lay bread slices on a plate with the melted cheese facing up.
  13. Slice jalapenos in half and lay 4 halves on two of the cheesy bread slices.
  14. Fold up the two sandwiches so that each sandwich has 2 stuffed jalapenos in the middle.
  15. Slice in half, serve warm, right way with extra napkins (because it’s messy and to wipe your brow when you sweat from the spice!)

Mix the ingredients in a bowl for the Pimento Cheese. This is my go to recipe for Pimento Cheese spread however sometimes I substitute the mayo for cream cheese.
Slice jalapenos and scoop out the insides. Fill with Pimento Cheese and bake for 10 minutes.
I love this thick Texas Toast style Jalapeno Cheese bread I found at my local bakery. It really makes this sandwich but if you can’t find this bread substitute any bread you like.
I love Muenster cheese. It’s mild but melts well and I use it on a lot of my sandwiches.
Melt a slice on each slice of toasted bread.
Take the stuffed jalapenos out of the oven and let cool slightly then cut in half.
Place the halved stuffed jalapenos on two of the bread slices and top with the other slice of cheesy bread. Slice the bread in half and serve.
Flavorful (and spicy!), messy, and delicious. Three of the things I look for in a great sandwich!

For my first #WheretoEatWednesday, I am sharing a local NWA favorite: Rein Sushi and Hibachi. Located in downtown Springdale, AR, they recently celebrated their 1 year anniversary. We dined here orignally when they first opened. It was a lunch date, and I remember loving the atmosphere and having great service, but we ordered hibachi and skipped the sushi during that visit. It was good, but I knew I needed to go back and have an adventurous sushi meal to really see what they were all about! 

Flash forward to this spring when we finally made time for a family lunch date on my husband's birthday, and I knew just where to go! When we arrived, the staff at Rein was so welcoming and kind. The small dining area has fun swinging seats and an open sushi bar. It may be small but does not feel crowded at all and is very open and bright. When we were sat, the co-owner and chef Rei came over to greet us and recommended skipping the menu and dining on a selection of his favorites and the restaurant's most popular appetizers and sushi. Let me tell you, if the chef offers to send over his dishes of choice instead of ordering off the menu, always say YES! It was all beautifully crafted, amazingly fresh, and absolutely delicious! Some of our favorites included the Crab Wonton Nachos and Monkey Brain Stuffed Avocado appetizers and the spicy Smokey Ozark Sashimi. The sushi at Rein is hands down the best I have had in the area, and I kid you not when I say every single piece I ate made me close my eyes in ecstasy! To top off our amazing meal, we shared a creamy slice of Yuzu Cheesecake, which is now my new favorite. 

So next time you are craving sushi, hibachi, and fresh seafood, check out Rein Sushi and Hibachi for lunch or dinner. They are open 6 days a week (closed on Sunday) and are truly one of the best meals you will have in NWA! Stay tuned for a gift card giveaway later today.

Ava and I attended an upcycled jewelry tree craft class for Earth Day at @bentonvillepubliclibrary tonight. We used mostly broken earrings, charms, and miscellaneous trinkets from home glued on top of twisted wire to create this unique art. I included pieces from my childhood and from my Nana.
