Egg in a Hole is one of my favorite easy breakfast recipes and my kids love it too!
To celebrate spring and our favorite springtime holiday, Easter, today I made Easter Bunny themed Egg in a Hole for #EasterBrunchWeek !

Easter Egg in a Hole

Makes 4

Ingredients

  • 4 slices Texas Toast
  • 4 large eggs I use Eggland's Best brand
  • 1/4 cup shredded white cheddar cheese optional
  • salt and cracked black pepper to taste

Instructions

  • Using a Easter bunny themed cookie cutter, cut out shapes in the center of each slice of toast.
  • Coat a large pan with non stick spray and heat over medium heat.
  • Add one piece of cut out sliced bread and the cookie cutter shape piece.
  • Toast one side for a minute until toasted, spray pan again, then flip.
  • Break an egg into the center of the cut out bread.
  • Cook, adding a sprinkle of cheese and salt and pepper if desired.
  • Remove from pan to a plate once the egg is cooked to your liking.
  • Repeat with remaining bread and eggs.
  • Serve warm and enjoy!

 The two most important items needed for this recipe: Eggland’s Best large or XL eggs and adorable bunny shaped cookie cutters!
 You need large sliced bread to be able to use the Easter cookies cutters so I went with my favorite Texas Toast. Brioche would also be a delicious choice! 
 As long as the cookie cutter can fit in the center of the bread slice, and not cut through the crusts and sides, it will work great for this recipe!  
 Using a Easter themed cookie cutter, cut out shapes in the center of each slice of toast.
Coat a large pan with non stick spray and heat over medium heat.
 Add one piece of cut out sliced bread and one of the cookie cutter shaped pieces.
Toast one side for a minute until toasted, spray pan again, then flip.
 Break an egg into the center of the cut out bread.
 I always add my egg to a bowl first to avoid dropping shell into the skillet. 
 Cook, adding a sprinkle of cheese and salt and pepper if desired. 
 For my daughter I beat the egg first before adding so it was similar to an omelet style. 
 Too cute to eat {or is it}?!
 Remove from pan to a plate once the egg is cooked to your liking.
Repeat with remaining eggs and bread and then serve warm.
